Pillowy soft cream cheese cookies that melt in your mouth!

Provided by Courtney Whitmore

Categories     Dessert

Time 1h25m

Number Of Ingredients 8

1/2 cup butter, softened ((1 stick))
4 ounces cream cheese, room temperature
1 cup granulated white sugar
1 egg
1 teaspoon vanilla extract
1 teaspoon almond extract
1/2 teaspoon baking powder
1 3/4 cup cake flour

Steps:

  • Line baking sheet with parchment paper. Cream together butter and cream cheese with electric mixer.
  • Add sugar and beat for 1 minute. Add egg and beat to combine. Add extracts and beat until combined. Add in baking powder and cake flour (in three sections), mixing to combine.
  • Once incorporated, refrigerate dough for at least an hour.
  • Preheat oven to 375 degrees F. Dough is sticky so use flour on your hands to roll out 1-2 inch balls. You can use the bottom of a cup/glass dipped in flour to gently flatten the balls. Don't flatten too much or the cookies won't puff up.
  • Bake for 9-11 minutes. Important: Pull them out when you see the underside edges turning golden! This might vary for your oven and altitude. Watch these cookies carefully.

LEMON CREAM CHEESE COOKIES

Lemon Cream Cheese Cookies image

Chewy and sweet, these simple cookies are heavenly with a cup of tea - and a lavish dose of fresh lemon zest provides some pluck. Cream cheese is the star ingredient in both the cookie and its glaze, and performs two tasks: It imparts tanginess and contributes to the soft texture. These cookies are simple but delicate, so you'll want to pull them from the oven as soon as they begin to turn golden, then let them cool directly on the baking sheets until they firm up. The glaze is optional, but it's easy to whip together while the cookies cool.

Time 30m

Yield 1 1/2 dozen cookies

Number Of Ingredients 10

1 1/2 cups/190 grams all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon kosher salt
6 tablespoons/85 grams unsalted butter (3/4 stick), at room temperature
4 ounces/105 grams cream cheese, at room temperature
1 cup/200 grams granulated sugar
1 lemon, zested and juiced (about 4 teaspoons zest and 2 tablespoons juice)
1 large egg
3 tablespoons confectioners' sugar
1 1/2 tablespoons milk, plus more, as needed

Steps:

  • Heat the oven to 350 degrees. In a medium bowl, whisk together the flour, baking soda and salt. In a large bowl with an electric mixer on medium, beat together the butter and half the cream cheese until combined, about 2 minutes. Beat in the granulated sugar and 4 teaspoons lemon zest until creamy, 1 to 2 minutes more. Beat in the egg until combined. Add flour mixture and beat until combined.
  • Line two rimmed baking sheets with parchment paper. Portion the dough into 2-tablespoon scoops and arrange them on the sheets at least 1 1/2 inches apart.
  • Bake, rotating halfway through baking, until the cookies are puffed and set and just beginning to turn golden, 10 to 12 minutes. Transfer baking sheets to wire racks until cookies are completely cooled.
  • Meanwhile, prepare the optional glaze: Whisk together the remaining cream cheese with the confectioners' sugar, milk and 1 1/2 tablespoons lemon juice until smooth. Add additional lemon juice or milk until mixture forms the proper consistency for a glaze. Drizzle over cooled cookies. Let cookies stand at room temperature until the glaze has set. Store in an airtight container at room temperature for up to one week or in the freezer for a month.

CREAM CHEESE COOKIES

Cream Cheese Cookies image

A triple dose of cream cheese (mixed into the batter, in chunks in the dough and as a glaze on top) makes these pillowy cookies extra tangy. Freezing the cream cheese before stirring it into the dough makes it easier to cut into clean pieces and keeps the chunks from disintegrating when shaping the dough into balls.

Time 3h25m

Yield 3 dozen cookies

Number Of Ingredients 9

2 3/4 sticks (1 cup plus 6 tablespoons) unsalted butter, at room temperature
1 teaspoon pure vanilla extract or vanilla bean paste
One 8-ounce package cream cheese, 6 ounces at room temperature, 2 ounces frozen
1 1/4 teaspoons kosher salt
4 cups confectioners' sugar, sifted
1 large egg yolk
3 1/2 cups all-purpose flour, plus more for flouring (see Cook's Note)
2 tablespoons whole milk, plus more if needed
Very finely grated lime zest or finely minced cranberries, for garnish, optional

Steps:

  • Position an oven rack in the center of the oven and preheat to 325 degrees F. Line a baking sheet with parchment.
  • Combine the butter, vanilla, 4 ounces of the room-temperature cream cheese and 1 teaspoon of the salt in a large bowl and beat with an electric mixer on medium speed until creamy, about 1 minute. Add 2 cups of the sugar and beat until pale and fluffy, about 3 minutes. Add the egg yolk and beat until smooth, then add the flour and beat on low until the dough just comes together. Remove the frozen cream cheese from the freezer and chop into 1/4-inch cubes. Add the cubes to the dough, quickly stirring with a rubber spatula to evenly incorporate them into the dough. Refrigerate the dough for 1 hour.
  • Using a 1-ounce ice cream scoop or 2 tablespoons, scoop 12 portions of dough, roll into balls and transfer to the prepared baking sheet, spacing them evenly apart. Lightly flour the bottom of a 1/2-cup measuring cup and use it to flatten each cookie into a disk about 1/2 inch thick, re-flouring the cup after each cookie.
  • Bake, rotating the baking sheet halfway through, until the cookies look set but are still pale and barely brown on the bottom, 20 to 24 minutes. Cool the cookies on the baking sheet for 1 minute, then transfer them to a wire rack to cool completely. Repeat with the remaining cookie dough.
  • Meanwhile, combine the remaining 2 ounces room-temperature cream cheese, 2 cups sugar and 1/4 teaspoon salt in a medium bowl and beat with an electric mixer on low speed until the mixture forms a thick paste. Add the milk and stir slowly until a thick glaze forms.
  • When the cookies are cool, dip the entire surface of the top of each cookie in the glaze and lift up, letting the excess glaze drip off, then flip the cookie right-side up and onto the cooling rack. If the glaze is too thick, add another teaspoon of milk to loosen it. If using the cranberries or lime zest, sprinkle on top of the cookies while the glaze is still wet. Allow the glaze to set before serving, at least 10 minutes. Store the cookies in a single layer in an airtight container for up to 5 days.

Categories     Cookies

Number Of Ingredients 4

1 box(es) yellow cake mix
1 (8oz) package(s) cream cheese
1 stick(s) butter
1 - egg

Steps:

  • Soften Cream cheese and butter (about 20 seconds each in the microwave).
  • Add egg and cake mix; stir until smooth.
  • Roll into balls, place on greased cookie sheet and press down with spoon/thumb.
  • Bake at 350 degrees until tops are done but insides are still soft (about 10-15 min). Remove from pan to cool.

Tips:

  • Soften cream cheese properly: Make sure the cream cheese is at room temperature before you start baking. This will ensure that it mixes smoothly with the other ingredients and creates a creamy and consistent batter.
  • Measure ingredients accurately: Baking is a science, and accurate measurements are essential for success. Use a kitchen scale to measure ingredients like flour, sugar, and butter for the most precise results.
  • Don't overmix the batter: Overmixing can result in tough cookies. Mix the batter just until the ingredients are combined.
  • Chill the dough before baking: Chilling the dough for at least 30 minutes helps to firm it up and prevent the cookies from spreading too much in the oven.
  • Bake the cookies at the right temperature: The ideal oven temperature for baking cream cheese cookies is 350°F (175°C). This temperature allows the cookies to bake evenly without burning.
  • Let the cookies cool completely before frosting: Allow the cookies to cool completely on a wire rack before you frost them. This will help the frosting to set properly and prevent it from melting.
