1 (14.5 ounce) can chicken broth
1 (8 ounce) can tomato sauce
1 (1 ounce) package taco seasoning mix
1 ½ cups uncooked instant rice
1 (6 ounce) can black olives, drained and chopped
1 cup shredded Cheddar cheese
1 cup sour cream

Steps:

  • In a large pot, bring chicken broth, tomato sauce, and taco seasoning to a boil.
  • Stir rice into the pot, cover and remove from heat. Let the pot stand, covered, for 5 minutes.
  • Stir in cheese and olives; mix well. Serve with sour cream.

Found in a guide to Costa Rica, this makes a nice change from plain rice and is pretty simple to prepare. I tweaked slightly to use brown rice, most versions use white, and most versions use chicken broth. Use any way you would normally use cooked rice!

4 sprigs fresh cilantro (put some aside for garnish)
1/2 medium onion
1/2 red bell pepper (use any colour but green)
1 tablespoon canola oil (any neutral oil)
2 cups long grain brown rice
4 cups vegetable broth
1/2 teaspoon sea salt

Steps:

  • Chop cilantro, onion, and bell pepper very fine and set aside.
  • Add the oil to a large pan and sauté the dry rice for 2 minutes over medium high flame then add the chopped onion, sweet pepper and cilantro and sauté another 2 minutes.
  • Add the veggie broth and salt, bring to a boil, then cover and reduce heat to simmer until rice is tender (45-50 minutes).
  • Top with some reserved cilantro.

1 pound ground beef
1 medium onion, chopped
1 jar (16 ounces) salsa
1 can (15 ounces) tomato sauce
1 chicken bouillon cube
1-1/2 cups instant rice, cooked
Tortilla chips
Optional toppings: shredded cheddar cheese, kidney beans, sour cream, sliced ripe olives

Steps:

  • In a skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Add the salsa, tomato sauce and bouillon. Bring to a boil. Reduce heat; cover and simmer for 5 minutes.
