DANDELION GREEN GUMBO WITH GOOD THYME RICE



Dandelion Green Gumbo with Good Thyme Rice image

Number Of Ingredients 21

4 tablespoons extra-virgin olive oil, divided
1 cup white rice, such as Carolina brand
6 cups chicken or vegetable stock
4 to 5 sprigs fresh thyme
2 tablespoons butter
4 cloves garlic, finely chopped
3 to 4 ribs celery from the heart, chopped with greens
1 red bell pepper, chopped
1 large yellow onion, chopped
Salt and pepper
1 teaspoon sweet paprika, 1/3 palm full
1 bay leaf, fresh or dried
3 tablespoons all-purpose flour
1 bottle pale beer
3 to 6 teaspoons hot sauce (recommended: Frank's Red Hot) medium to spicy heat level
1 tablespoons Worcestershire sauce, eyeball it
1 (15-ounce) can petite diced, crushed or stewed tomatoes
4 to 5 cups, 2 bundles, dandelion greens, stemmed and chopped
1/4 teaspoon grated nutmeg
2 teaspoons lemon zest
2 scallions, finely chopped

Steps:

  • Heat a sauce pot over medium heat. Add 2 tablespoons extra-virgin olive oil and rice. Toast rice 2 minutes, add 2 cups stock and thyme sprigs and bring to a boil. Cover the pot, reduce heat to simmer and cook 18 minutes or until tender.
  • Heat a soup pot over medium to medium high heat. Add 2 tablespoons extra-virgin olive oil, 2 turns of the pan, and 2 tablespoons butter to the pot. When butter melts into oil, add garlic, celery, bell pepper and onion and season with salt, pepper and paprika. Cook to soften veggies, 5 minutes. Add bay leaf and flour and cook the flour another minute. Stir in the beer and reduce the liquid by half, a minute or so. Add hot sauce, Worcestershire and tomatoes. Add 1 quart stock to the pot, stir in the greens and season with nutmeg. Raise heat to bring to a quick boil then simmer 15 minutes until greens are no longer bitter. Adjust seasonings, to taste.
  • Uncover rice and add lemon zest and scallions. Remove the thyme stems and fluff rice with a fork. Remove bay from gumbo. Scoop up gumbo and top with scoops of rice and serve.

Seared Steaks with Bourbon-Thyme Pan Sauce, Rice Pilaf with Cranberries and Almonds image

2 tablespoons olive oil, divided
8 boneless steaks, such as fillet or rib-eye
Salt
Freshly ground black pepper
1 tablespoon dried thyme
1/2 cup bourbon
1 cup reduced-sodium beef broth, divided
1 tablespoon cornstarch
2 cups reduced-sodium chicken broth
2 cups instant brown rice
1/2 cup slivered almonds, lightly toasted
1/2 cup dried cranberries
2 teaspoons salt-free garlic and herb seasoning
2 tablespoons chopped fresh parsley leaves, optional

Steps:

  • Heat 1 tablespoon of the oil in large skillet. Season steaks with salt, pepper and thyme and add to hot pan. Sear 2 minutes per side, until golden brown. Add bourbon and cook 1 minute. Add 1/2 cup of the beef broth and bring to a simmer. Cook 2 minutes, until cooked to medium. Remove steaks from pan and transfer 4 of them to a serving platter. Reserve 4 steaks for another meal.
  • Dissolve cornstarch in remaining beef broth and add to pan. Simmer 1 minute, until sauce thickens. Spoon sauce over steaks before serving.
  • In a medium saucepan, bring chicken broth to a boil. Add rice, almonds, cranberries and herb seasoning, reduce heat to low, cover and cook 5 minutes, until liquid is absorbed. Remove from heat, stir in parsley and season with salt and pepper.

3 tablespoons butter
2 cups mushrooms (sliced)
1/2 cup onion (choipped)
1 1/4 cups arborio rice (or Risotto)
3 1/2 cups chicken broth
1 cup parmesan cheese (shredded)
2 tablespoons thyme (fresh, chopped})

Steps:

  • Preheat oven to 375 degrees.
  • In a large oven proof skillet, melt butter over medium heat; add mushrooms & onions, cook about 5 minute.
  • Stir in rice; cook until lightly toasted, about 2 minute Strir in broth, season with salt and pepper.
  • Cover skillet, place in oven; bake 45 minute Cook until rice is almost done.
  • Remove skillet stir in Parmesan Cheese and Thyme, season with salt and pepper if neessary. Seve.

My mother has used this for a stuffing for turkey and cornish hens, but I like to mix in some peas and serve it as a side dish. This is the recipe for the basic stuffing my mother uses.

4 cups cooked white rice
1 tablespoon ground thyme
1/3 cup butter
1/2 teaspoon garlic salt (optional, I added this after my mother's recipe)

Steps:

  • Mix the butter, thyme and garlic salt into the rice until mixed.
  • As a stuffing: Stuff into cornish hen or turkey and bake until bird is done. I serve the stuffing still inside the hen, but I take it out of the turkey and sometimes bake the rice a bit more for the added crisp. (My family likes crispy rice :) ).
  • To crispify: Throw the bowl into the oven at 350 for 8-10 minutes or until it's slightly crispy on top.
  • As a side dish, I mix as above and add peas and serve. I imagine the rice would work well mixed with other veggies, but we just love our peas so much that it's normally what I add. Trust me and use real butter, and don't omit.

1 cup uncooked white rice
1 (14.5 ounce) can chicken broth
1 tablespoon fresh lemon juice
