PEANUT BUTTER AND JELLY THUMBPRINT COOKIES
These cookies are great for kids of all ages. I usually double the recipe when I make them. Using a cookie scoop and soda bottle cap to make the indentations results in uniform cookies, which makes a nice presentation. But you can improvise with other lids; just aim for something about the size of a quarter. Use any variety of jelly, but I do not recommend jelly with chunks of fruit, like strawberry. Attempting to move the cookies prior to cooling completely will cause them to break.

Steps:
- For cookies, cream margarine with peanut butter. Mix in sugar, then beat in eggs and milk. Stir in baking soda, oats, and flour.
- To Make Filling: Combine raisins, water, and lemon juice. Heat until nearly boiling. Mix sugar with cornstarch; add enough (cold) water to make a paste. Stir into raisin mixture and heat until clear.
- Shape dough into walnut-sized balls. Place on a greased cookie sheet. Using your thumb, indent the center of each ball, making a fairly good-sized hollow spot. Fill with about a teaspoon of filling. Bake at 375 degrees F (190 degrees C) for about 10-12 minutes.

Tips:
- Use high-quality, unsalted butter. This will give your cookies the best flavor and texture.
- Cream the butter and sugar together until light and fluffy. This will help to incorporate air into the dough, making the cookies light and airy.
- Chill the dough for at least 30 minutes before baking. This will help to firm up the dough and prevent the cookies from spreading too much in the oven.
- Use a small cookie scoop or a teaspoon to measure out the dough. This will help to ensure that all of the cookies are the same size and shape.
- Bake the cookies for 10-12 minutes, or until the edges are just beginning to brown. Overbaking will make the cookies dry and crumbly.
- Let the cookies cool on a wire rack before filling them. This will help to prevent the filling from melting and running out of the cookies.
- Fill the cookies with your favorite jam, jelly, or frosting. You can also get creative and use different fillings, such as chocolate chips, nuts, or sprinkles.
Conclusion:
Thumbprint butter cookies are a delicious and easy-to-make treat that are perfect for any occasion. With their delicate, buttery flavor and sweet, jammy filling, these cookies are sure to be a hit with everyone who tries them. So next time you're looking for a simple yet satisfying cookie recipe, give these thumbprint butter cookies a try. You won't be disappointed!
