THREE ONION DIP

Yield Makes 6 servings

Number Of Ingredients 14

2 tablespoons, plus 1 teaspoon vegetable oil
2 medium onions, thinly sliced
2 anchovy fillets packed in oil, drained
1 teaspoon mushroom powder (optional)
4 garlic cloves, finely chopped, divided
4 scallions, green and white parts separated
Kosher salt
Freshly ground pepper
1/3 cup mayonnaise
1/3 cup plain whole-milk Greek yogurt
1/3 cup sour cream
1 tablespoon chopped fresh chives
1 teaspoon Worcestershire sauce
Potato chips (for serving)

Steps:

  • Heat 2 tablespoons oil in a medium skillet over medium-low heat. Add onions, anchovies, mushroom powder, if using, and 1 tablespoon garlic. Cook, stirring often, until onions are golden brown and softened, 40-45 minutes.
  • If onions start to burn or stick, reduce heat and add water a splash at a time, scraping up browned bits. Let cool, then finely chop.
  • Meanwhile, heat a dry medium skillet, preferably cast iron, over medium-high heat. Toss scallion whites with remaining 1 teaspoon oil; season with salt and pepper. Cook, turning occasionally, until charred, about 5 minutes. Let cool; finely chop. Thinly slice greens.
  • Mix onion mixture, scallion whites and greens, mayonnaise, yogurt, sour cream, chives, Worcestershire, and remaining garlic in a medium bowl; season with salt and pepper. Serve with chips.

Tips:

  • Choose the Right Onions: Use a combination of yellow, white, and red onions for a well-rounded flavor profile. Sweet onions can also be used for a milder dip.
  • Properly Caramelize the Onions: Take your time caramelizing the onions over medium-low heat. This step brings out their natural sweetness and adds a deep, rich flavor to the dip.
  • Use High-Quality Sour Cream and Mayonnaise: Opt for full-fat sour cream and mayonnaise for a creamy and flavorful dip. Low-fat or non-fat alternatives may result in a thinner, less satisfying dip.
  • Season Generously: Don't be shy with the seasonings! Garlic powder, onion powder, salt, and pepper are essential, and you can also add herbs like thyme, rosemary, or chives for an extra burst of flavor.
  • Chill Thoroughly: Allow the dip to chill for at least 2 hours before serving. This helps the flavors meld together and develop, resulting in a more delicious dip.
  • Serve with Variety of Dippers: Offer a variety of dippers, such as tortilla chips, pita chips, crackers, or vegetable crudités, to accommodate different preferences.

Conclusion:

Three-onion dip is a versatile and crowd-pleasing appetizer that is easy to make and perfect for any occasion. With its creamy texture, caramelized onion sweetness, and savory seasonings, this dip is sure to be a hit. Experiment with different dippers and garnishes to create a unique and memorable presentation that will leave your guests wanting more. So, gather your ingredients, caramelize those onions to perfection, and indulge in the deliciousness of this classic dip!
