Kosher salt
12 ounces gemelli, cavatappi or other spiral-shaped pasta
3 tablespoons unsalted butter
1 tablespoon all-purpose flour
1 teaspoon dry mustard
Pinch of cayenne pepper
1 (12-ounce) can evaporated milk
1/2 cup whole milk
3/4 cup shredded yellow sharp cheddar cheese
3/4 cup shredded monterey jack cheese
1/2 cup grated parmesan cheese
1/2 cup panko (Japanese breadcrumbs)
2 tablespoons chopped fresh parsley, chives and/or scallions

Steps:

  • Bring a pot of salted water to a boil; add the pasta and cook until al dente, about 8 minutes. Meanwhile, melt 1 tablespoon butter in a saucepan over medium heat. Add the flour, mustard and cayenne and stir with a wooden spoon to make a paste. Cook, stirring, until the paste puffs slightly, about 1 minute. Whisk in both milks and 1/2 teaspoon salt and simmer, whisking occasionally, until slightly thickened and creamy, 6 to 7 minutes. Add the cheddar and jack cheeses and all but 2 tablespoons of the parmesan and whisk until melted; keep warm. Combine the panko, herbs and/or scallions, 1 tablespoon butter and the remaining parmesan in a microwave-safe bowl and microwave until the butter melts, about 1 minute; toss. Drain the pasta, reserving about 1 cup cooking water, and return to the pot. Toss with the remaining 1 tablespoon butter, then stir in the cheese sauce, adding the reserved cooking water if needed. Season with salt and top with the breadcrumb mixture.

6 large eggs
1/2 teaspoon cream of tartar

  • In a small saucepan, melt butter over medium heat. Stir in flour until smooth; cook 1 minute. Gradually whisk in milk, mustard, salt and pepper sauce. Place eight ungreased 8-oz. ramekins in a baking pan., With clean beaters, beat egg whites with cream of tartar on high speed until stiff but not dry. With a rubber spatula, gently stir a fourth of the egg whites into cheese mixture. Fold in remaining whites., Transfer to prepared ramekins. Add 1 in. of hot water to baking pan. Bake 40-45 minutes or until tops are golden brown. Serve immediately. Freeze option: Securely wrap unbaked souffles with foil and freeze. To use, preheat oven to 325°. Remove foil and place frozen souffles in a baking pan; add 1 in. warm water to larger pan. Bake 60-65 minutes or until heated through and tops are golden brown.

2 pounds ground beef
2 small onions, chopped
1 garlic clove, minced
1 jar (26 ounces) spaghetti sauce
1 jar (4-1/2 ounces) sliced mushrooms, drained
1/2 cup sour cream
1/2 pound process cheese (Velveeta), cubed
2 cups shredded part-skim mozzarella cheese

Steps:

  • Cook pasta according to package directions. Meanwhile, in a large saucepan, cook the beef, onions and garlic over medium heat until meat is no longer pink; drain. 2 tablespoons cream cheese, softened
1 -2 clove minced garlic
1 1/2 tablespoons mayonnaise
1 (8 ounce) can pillsbury refrigerated crescent dinner rolls (I buy the jumbo can and add an extra tbsp of mayo)
fresh parsley or dried parsley, for garnish

Steps:

  • Heat oven to 375°F Lightly spray cooking sheet with non stick cooking spray.
  • In small bowl mix all cheeses and mayo until well blended and soft.
  • Separate dough into 2 long rectangles: press perforations to seal.
