THREE CHEESE QUESADILLAS

Time 17m

Yield 6 quesadillas

Number Of Ingredients 7

4 medium roasted jalapenos, halved lengthwise, seeded, and thinly sliced crosswise
1 cup shredded jack cheese
1 cup shredded Cheddar
1 cup shredded provolone cheese
2 tablespoons chopped cilantro leaves
6 (6-inch) flour tortillas
Tomatillo Salsa, for serving

Steps:

  • Combine chiles, cheese, and cilantro in a medium bowl and toss to evenly mix.
  • Heat a seasoned cast iron skillet or a large frying pan over medium heat. Add 1 quesadilla and cook until soft, about 15 to 30 seconds.
  • Add 1/2 cup cheese mixture on one half, fold in half, and cook until cheese is melted and tortilla is golden brown, about 1 to 2 minutes. Repeat for remaining quesadillas. Cut each quesadilla into 4 wedges and serve with tomatillo salsa.

Tips:

  • Choose the right cheese: The type of cheese you use will greatly affect the flavor of your quesadilla. For a classic quesadilla, use a Mexican cheese blend or queso Oaxaca. If you want something a little more flavorful, try using a sharp cheddar or Monterey Jack cheese.
  • Use fresh tortillas: Fresh tortillas will make your quesadilla more pliable and less likely to break when you fold it. If you can't find fresh tortillas, you can also use store-bought tortillas, but be sure to heat them up before using them.
  • Don't overcrowd the quesadilla: If you put too much filling in your quesadilla, it will be difficult to fold and will likely fall apart. Stick to a thin layer of cheese and fillings.
  • Cook the quesadilla over medium heat: Cooking the quesadilla over medium heat will help to prevent the cheese from burning and will allow the tortillas to cook through evenly.
  • Serve the quesadilla immediately: Quesadillas are best served immediately after they are cooked. This will ensure that the cheese is melted and gooey and the tortillas are still crispy.

Conclusion:

Quesadillas are a delicious and versatile dish that can be made with a variety of fillings. With a few simple tips, you can make the perfect quesadilla every time. So next time you're looking for a quick and easy meal, give quesadillas a try!
