2 burrito-size spinach tortillas
2 burrito-size whole wheat tortillas
2 burrito-size jalapeno-Cheddar tortillas
1 cup spinach leaves, chopped
One 6-ounce jar marinated artichoke hearts, chopped
1/4 cup sliced green olives
1/4 cup sliced sun-dried tomatoes
4 slices Swiss cheese
8 large slices pepperoni
8 large slices salami
8 large slices spicy capicola
4 slices pepper jack cheese
1 cup arugula
6 mini sweet peppers, slice thin
1/2 cup chopped hot cherry peppers

Lay out the spinach, whole wheat and jalapeno-Cheddar tortillas and divide the cream cheese mixture among them. Using a spoon or offset spatula, spread the mixture all the way to the edges of each tortilla.

Tips:

  • Prep the Puff Pastry: Before starting, ensure the puff pastry is thawed and cold. This will make it easier to work with and prevent it from becoming too sticky.
  • Use Quality Ingredients: Opt for high-quality cheeses like sharp cheddar, creamy mozzarella, and flavorful Parmesan to create a delicious filling.
  • Season the Cheese Spread: Add a sprinkle of garlic powder, salt, and pepper to the cream cheese mixture for extra flavor.
  • Spread the Filling Evenly: Use an offset spatula to spread the cheese filling evenly over the puff pastry sheet, leaving a small border around the edges.
  • Roll Tightly: When rolling the puff pastry, ensure it's rolled tightly to create a compact pinwheel shape.
  • Chill Before Slicing: After shaping the pinwheels, chill them in the refrigerator for at least 30 minutes. This will make them easier to slice and prevent them from falling apart.
  • Bake at High Temperature: Preheat your oven to a high temperature (usually 400°F or higher) to create crispy and flaky pinwheels.
  • Watch the Baking Time: Keep an eye on the pinwheels while they're baking to ensure they don't overcook. Overbaking can make them dry and less flavorful.
  • Serve Warm or Cold: These versatile pinwheels can be enjoyed warm out of the oven or chilled for a delightful cold appetizer.

Conclusion:

Three-cheese pinwheels are a delightful appetizer or snack that combines the flavors of rich cheeses, buttery puff pastry, and herbs.
