THREE-CHEESE CHICKEN PASTA BAKE RECIPE - (4.5/5)

Three-Cheese Chicken Pasta Bake Recipe - (4.5/5) image

Provided by Terry M

Number Of Ingredients 11

2 cups dry high-fiber penne pasta or whole wheat penne pasta
1 cup plain nonfat Greek yogurt
1 cup low-fat cottage cheese
1 cup spaghetti sauce
1 whole large egg plus 1 large egg white, beaten
3/4 cup grated parmesan cheese, divided
1 cup shredded mozzarella cheese, divided
1 teaspoon garlic powder
1 tablespoon dried parsley
1/2 teaspoon salt
1 1/2 cups chopped or shredded cooled chicken breast

Steps:

  • Preheat oven to 350 degrees. Spray a 9x13 inch baking dish with cooking spray. Fill a medium pot with water and bring to a boil over high heat. Salt the water liberally, lower the heat to medium high, and add the pasta. Cook until tender, 7 to 10 minutes. Drain and set aside. In a large bowl stir together the yogurt, cottage cheese, spaghetti sauce, egg and egg white, 1/2 cup parmesan, 1/4 cup mozzarella, garlic powder, parsley, and salt. Add the chicken and pasta to the sauce and toss to combine. Pour the pasta mixture into the baking dish and spread evenly. Top evenly with remaining 1/4 cup parmesan and 3/4 cup mozzarella. Bake for 35 to 40 minutes or until the cheese is melted.

Tips:

  • Mise en Place: Before starting to cook, make sure you have all necessary ingredients and equipment ready. This will help you stay organized and avoid scrambling during the cooking process.
  • Use Quality Ingredients: The quality of your ingredients will greatly affect the taste of your dish. Choose fresh vegetables, high-quality cheese, and flavorful spices.
  • Cook the Pasta Al Dente: When boiling the pasta, aim for an al dente texture. This means the pasta should be cooked but still have a slight bite to it. Overcooked pasta will become mushy and ruin the dish.
  • Don't Overcrowd the Pan: When searing the chicken breasts, make sure not to overcrowd the pan. This will prevent the chicken from cooking evenly and will result in steamed chicken instead of seared chicken.
  • Use a Dutch Oven or Large Skillet: To make the pasta bake, you will need a large Dutch oven or skillet that can accommodate all the ingredients comfortably. This will ensure that the pasta cooks evenly and doesn't clump together.
  • Don't Skimp on Cheese: Cheese is the star of this dish, so don't be afraid to use plenty of it. A combination of mozzarella, cheddar, and Parmesan cheeses provides a rich and flavorful sauce.
  • Season to Taste: Before serving, taste the pasta bake and adjust the seasoning as needed. Add more salt, pepper, or garlic powder if desired.

Conclusion:

This Three-Cheese Chicken Pasta Bake is a delicious and comforting dish that is perfect for a weeknight dinner or a special occasion. It combines the flavors of tender chicken, creamy cheese sauce, and al dente pasta in one irresistible dish. With its ease of preparation and crowd-pleasing taste, this recipe is sure to become a favorite in your kitchen. So, gather your ingredients, preheat your oven, and get ready to indulge in a cheesy pasta extravaganza!
