- 8 slices bacon
- 1tbsp. olive oil
- 1 large onion, thinly sliced
- one 6 oz. jar marinated artichoke hearts, drained and chopped
- one 12 inch mama mary's gourmet pizza crust, or any 12 inch prebaked pizza crust
- 4 oz. smoked swiss cheese, sliced
- 1/2 cup sour cream
- 1/2 cup crumbled blue cheese
- 1/4 tsp. garlic powder
- 1/4 cup freshly grated asiago or parmesan cheese
- 1 tbsp. chopped fresh italian parsley

Steps:

  • Preheat oven to 450. In medium nonstick skillet, cook bacon til crisp. Remove bacon and drain on paper towels. Discard bacon grease. When cool enough to handle, crumble bacon and set aside.
  • In same skillet, heat 1/2 Tbsp. of the olive oil over medium heat. Add onion and sauté til tender and lightly browned. Stir in bacon and chopped artichokes and sauté til heated through; set aside.
  • Brush crust with remaining 1/2 tablespoon olive oil. Arrange Swiss cheese slices over the crust.
  • In a small bowl, blend the sour cream, blue cheese and garlic powder. Spread mixture over Swiss cheese on the pizza crust. Top with the onion artichoke mixture and sprinkle with Asiago or Parmesan cheese. Put the pizza directly on the oven rack and reduce oven temperature to 425. Bake pizza for 10 to 12 minutes.
  • Sprinkle pizza with chopped parsley and cut into wedges to serve. Serves 8

1 tsp salt
2 tsp baking powder
50g butter , chopped
2 eggs
3 tbsp milk
1 tbsp olive oil
1 green pepper , quartered, deseeded and thinly sliced
4 rashers streaky bacon , chopped
5 spring onions , thinly sliced (the white and green parts)
2 tbsp tomato ketchup mixed with 2 tbsp tomato purée
about 6-8 cherry tomatoes , halved
85g mature cheddar , grated

Steps:

  • Heat oven to 220C/fan 200C/gas 7. Mix the flour, salt and baking powder in a bowl, then rub in the butter until it disappears. Mix the eggs and milk together, then stir into the dry ingredients to make a soft dough. Shape into a round on a lightly floured surface, lift onto a non-stick baking tray, then press out to a circle about 24cm across to make the pizza base.
  • Heat the oil in a frying pan, then stir-fry the pepper and bacon until the pepper is soft. Take off the heat, then stir in the spring onion.
  • Spread the ketchup over the pizza base, then evenly tip over the pepper and bacon mixture. Scatter over the tomatoes, followed by the cheese. Bake for 15 mins until golden. Serve with a salad or coleslaw.

1 tablespoon finely chopped fresh rosemary
1 tablespoon fresh thyme leaves
1 teaspoon red pepper flakes, plus additional for seasoning
3 cloves garlic, grated
1 tablespoon finely chopped fresh parsley
Kosher salt
4 slices thick-cut bacon
All-purpose flour, for dusting
2 pounds pizza dough, divided into sixteen 2-inch balls weighing 2 ounces each
4 teaspoons tomato paste
16 basil leaves
12 ounces fresh mozzarella, cut into 1/4-inch cubes
Marinara sauce, warmed, for serving

Steps:

  • Place a pizza stone on the center rack of the oven and preheat the oven to 500 degrees F. Line a baking sheet with parchment paper and place it on top of the pizza stone.
