1 package (1/4 ounce) active dry yeast
3 tablespoons sugar plus 1/2 teaspoon sugar
2-1/4 cups warm water (110° to 115°)
1 tablespoon salt
6-1/4 to 6-3/4 cups bread flour
2 tablespoons canola oil

Steps:

  • In a large bowl, dissolve yeast and 1/2 teaspoon sugar in warm water; let stand until bubbles form on surface. Whisk together remaining 3 tablespoons sugar, salt and 3 cups flour. Stir oil into yeast mixture; pour into flour mixture and beat until smooth. Stir in enough remaining flour, 1/2 cup at a time, to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, 8-10 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, 1-1/2 to 2 hours., Punch dough down. Turn onto a lightly floured surface; divide dough in half. Shape each into a loaf. Place in 2 greased 9x5-in. loaf pans. Cover and let rise until doubled, 1 to 1-1/2 hours., Bake at 375° until golden brown and bread sounds hollow when tapped or has reached an internal temperature of 200°, 30-35 minutes. Remove from pans to wire racks to cool.

I have been making this for many years. I started making them in coffee cans and vegetable cans to give as gifts and to send for gifts they are real handy when needing to ship in the mail or Fed-Ex or by UPS. What is real nice about baking in the cans is when you slice them is that they fit in the toaster perfectly or on a party tray beautifully. I love the 3C bread more so because I am not a big fruit cake person. Sometimes I add spiced rum for that special touch.

1 teaspoon baking soda

3 eggs
1/2 cup milk
1/2 cup vegetable oil
2 cups shredded carrots
1 1/2 cups flaked coconut
1/2 cup candied cherry, quartered
1/2 cup raisins
1/2 cup chopped pecans

Steps:

  • In a large bowl, combine the first six ingredients.
  • In a small bowl, combine the eggs, milk and oil.
  • Stir into dry ingredients just until moistened.
  • Fold in the carrots, coconut, cherries, raisins and pecans.
  • Pour into four greased 5-3/4-in. x 3-in. x 2-in. loaf pans.
  • Bake at 350° for 40-50 minutes or until a toothpick inserted near the center comes out clean.

1/2 loaf sourdough bread
1/2 loaf rye bread
4 tablespoons unsalted butter plus more for greasing
1 cup frozen chopped onions
3 stalks celery, chopped
2 medium carrots, chopped
Kosher salt and freshly ground black pepper
1 (14-ounce) bag cornbread stuffing
2 cups chicken broth
1 cup turkey gravy
2 large eggs, beaten
1 tablespoon poultry seasoning
1/2 cup grated Parmesan

Steps:

  • Cut the breads into 1-inch cubes and spread them out onto baking sheets. Leave out overnight to get stale. (Alternately, bake them in a 300 degree F oven for 30 minutes to dry them out).
  • In a large skillet over medium heat, add the butter. When it is melted add the onions, celery, and carrots and season with salt and pepper. Cook until the vegetables are soft, about 10 minutes. Turn off the heat and let cool a bit.
  • Preheat the oven to 350 degrees F. Butter a 9 by 13-inch baking dish.
  • Put the bread cubes into a large bowl with the cornbread stuffing and add the cooled vegetables. In a medium bowl, whisk together the broth, gravy, eggs, and poultry seasoning. Pour over the bread and mix; the mixture should be fairly moist but not wet. If it seems to dry, add some more broth. Fill the baking dish with the stuffing and top with the Parmesan. 2/3 c roughly chopped maraschino cherries
