2 cups fresh raspberries (1/2 to 3/4 pound)

Time 3h

Yield 8

Number Of Ingredients 9

2 cups all-purpose flour
½ teaspoon salt
⅔ cup shortening, chilled
6 tablespoons cold water
1 cup fresh strawberries, halved
2 cups fresh raspberries
1 ½ cups fresh blueberries
½ cup white sugar
3 tablespoons cornstarch

Steps:

  • Combine the flour and salt. Using a pastry blender, cut in the shortening until the pieces are the size of small peas. Sprinkle 1 tablespoon of the water over part of the mixture, then gently toss with a fork. Push moistened portion to the side of the bowl. Repeat, using 1 tablespoon of water at a time, until all is moistened. Divide the dough in half. Form each half into a ball and flatten slightly. Wrap in plastic and refrigerate for at least 30 minutes.
  • Transfer one piece of dough to a lightly floured surface. Roll the dough from the center to the edges to form a 12-inch circle. Wrap the crust around the rolling pin. Unroll it onto a 9-inch pie plate. Ease the crust into the pie plate, being careful not to stretch it. Trim the bottom crust evenly with the rim of the pie plate, and return the pastry-lined pie plate to the refrigerator.
  • In a large mixing bowl, stir together the sugar and cornstarch. Add the strawberries, raspberries, and blueberries; gently toss until berries are coated. Allow fruit mixture to stand for about 15 minutes.
  • Preheat the oven to 375 degrees F (190 degrees C). Place a baking sheet in the oven to preheat.
  • Roll out the remaining pastry for the top crust. Stir the berry mixture and pour the filling into the pastry-lined pie plate. Place the top crust over the pie and trim the edges, leaving a 1/2-inch overhang. Fold the top crust under the bottom crust, pressing lightly to seal. Crimp the edges of the crust and cut vents in the top to allow steam to escape. To prevent over-browning, cover the edge of the pie with foil.
  • Bake in the preheated oven on the baking tray for 25 minutes. Remove the foil.
  • Bake for an additional 20 to 30 minutes, or until the filling is bubbling and the crust is golden. Cool on a wire rack.

THREE-BERRY PIE

Yield 8 Servings

Number Of Ingredients 15

CRUST
2 cups all purpose flour
1 tsp. salt
1 cup chilled solid vegetable shortening, cut into ½-inch cubes
2 Tbsp. ice water
1 large egg, beaten to blend, divided
1½ tsp. distilled white vinegar
FILLING
5 cups mixed berries (such as raspberries, blackberries, and blueberries)
1 Tbsp. brandy
1 Tbsp fresh lemon juice
2½ Tbsp quick-cooking tapioca
1½ cups (scant) sugar
½ tsp. ground cinnamon
1 Tbsp. raw sugar

Steps:

  • FOR CRUST: Whisk flour and salt in large bowl. Add shortening. Using back of fork, cut shortening into flour mixture until coarse meal forms. Mix 2 Tbsp ice water, 2 Tbsp beaten egg, and vinegar in small bowl to blend. Add egg-vinegar mixture to flour mixture; toss with fork until moist clumps form (cover and refrigerate remaining beaten egg for glaze). Gather dough into 2 balls, 1 slightly larger than the other. Flatten each into disk, wrap separately in plastic, and refrigerate dough at least 1 hour and up to 1 day. FOR FILLING: Gently mix berries, brandy, and lemon juice in large bowl. Grind tapioca in spice grinder to fine powder. Mix tapioca powder, scant 1½ cups sugar, and cinnamon in small bowl. Add to berries and toss to coat. Let stand 45 minutes, stirring occasionally. Preheat oven to 400°F. Roll out larger dough disk to 12-inch round. Transfer to 9-inch-diameter glass pie dish. Roll out smaller dough disk to 11-inch round. Transfer berry mixture to pastry-lined pie dish, mounding in center. Top with 11-inch dough round. Trim overhang to ½ inch. Fold overhang over; crimp edges. Brush crust with reserved beaten egg. Sprinkle with raw sugar. Cut several slits in top crust. Place pie on baking sheet. Bake pie until just beginning to brown, about 15 minutes. Reduce oven temperature to 350°F; continue baking until juices bubble through slits, about 25 minutes. Cool. (Pie can be made 8 hours ahead. Let stand at room temperature.)

Tips:

  • Use a variety of berries for a more flavorful pie. Some good combinations include strawberries, blueberries, raspberries, and blackberries.
  • If you don't have fresh berries, you can use frozen berries. Just be sure to thaw them before using.
  • Don't overfill the pie crust. The berries will release a lot of juice as they bake, so you need to leave some room for it.
  • To prevent the pie crust from getting soggy, pre-bake it for 10-15 minutes before adding the filling.
  • If you don't have time to make a homemade pie crust, you can use a store-bought one.
  • Serve the pie warm with a scoop of vanilla ice cream or whipped cream.

Conclusion:

This three-berry pie is a delicious and easy-to-make dessert that is perfect for any occasion. With its flaky crust and juicy filling, this pie is sure to be a hit with everyone who tries it. So next time you're looking for a special treat, give this three-berry pie a try.
