1/2 teaspoon baking powder
1/8 teaspoon salt
4-1/2 teaspoons cold butter

  • In a small bowl, combine berries and 2 tablespoons sugar; let stand for 30 minutes. Drain berries, reserving juice. If necessary, add water to the juice to measure 1/2 cup. 1/3 cup cold water
1 3/4-2 cups granulated sugar (divided)
1 1/2 tablespoons fresh lemon juice
6 cups mixed berries (picked over, rinsed and drained well if fresh, defrosted if frozen)
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
3/4 teaspoon salt
9 tablespoons cold unsalted butter, cut into bits
1/3 cup boiling water
whipped cream (optional) or ice cream (optional)

Steps:

  • Preheat oven to 400 degrees. Line a baking sheet with foil.
  • Stir together cornstarch and cold water in a large bowl until cornstarch is completely dissolved.
