2 (15-ounce) cans chili beans in sauce
1 (15-ounce) can kidney beans, drained
1 (15-ounce can) black beans, drained
2 (15-ounce cans) fire-roasted diced tomatoes (crushed tomatoes are also good)
2 medium green peppers (chopped (about 3 cups chopped))
2 medium yellow onions (chopped (about 3 cups chopped))
2 medium cloves garlic (chopped)
2 tablespoons chili powder
1 tablespoon cumin
1 teaspoon dried oregano
20 dashes Tabasco sauce (optional)
1 pound lean ground beef
2 pounds lean ground beef

Steps:

  • Add all ingredients except the Tabasco (if using) and the ground beef to the slow-cooker/Crock Pot. Stir. Cook on low for 8 - 10 hours or on high for 5-6 hours. Taste and add Tabasco if desired. If serving an all-vegan chili, skip to "Serve with toppings."

Add five cups of the chili to the browned ground beef. Stir, continuing the medium heat, and heat until boiling. Reduce heat to low and simmer for 20 - 30 minutes.
  • In a medium or large saucepan, brown the ground beef over medium heat with a little salt and pepper for flavor, if you wish. Drain off any fat. Add to the chili in the Crock Pot either at the beginning of the cooking process or near the end.

Tips:

  • Soak the beans overnight: Soaking the beans overnight will help them cook faster and more evenly. If you don't have time to soak the beans overnight, you can quick-soak them by boiling them for 1 minute, then removing them from the heat and letting them sit for 1 hour.
  • Use a variety of beans: Using a variety of beans will give your chili a more complex flavor and texture. Some good options include kidney beans, black beans, pinto beans, and great northern beans.
  • Don't overcook the chili: Chili is best when it is simmered for a long time, but you don't want to overcook it. Overcooked chili will lose its flavor and become mushy.
  • Add the dumplings at the end: The dumplings are best added to the chili at the end of the cooking time. This will prevent them from becoming overcooked.
  • Serve the chili with your favorite toppings: Chili is a great dish to serve with a variety of toppings. Some popular options include sour cream, shredded cheese, diced onions, and chopped cilantro.

Conclusion:

This three-bean chili with dumplings is a hearty and flavorful dish that is perfect for a cold winter day. The chili is easy to make and can be cooked in a crock pot, making it a great option for busy weeknights. The dumplings add a delicious and unique touch to the chili, and they are sure to be a hit with your family and friends. So next time you're looking for a warm and comforting meal, give this three-bean chili with dumplings a try.
