MATT'S "THOSE POTATOES"
Steps:
- Peel and thinly slice potatoes - immediately immerse in cold water filled bowl. Peel and thinly slice onion. Drain then dry potatoes on a dish towel. Layout potatoes in a thin layer on dish towel without too much overlap. Salt 50%, pepper 20% and sugar 30% potatoes as if on your plate (more than less). Combine seasoned potatoes and sliced onion in a large mixing bowel and mix thoroughly to season all. Have ready 5-7 heavy duty aluminum foil rectangles (12" x 16") sprayed with Pam cooking spray. Place potatoe/onion mixture into 5-7 equal amounts on each aluminum foil rectangle. Divide a stick of butter between 5-7 foil packets. Carefully seal potato/onion/butter foil packets into rectangles (4" x 8"). Place on rimmed baking sheet. Bake at 400 degrees for one hour.
Tips:
- Select the Right Potatoes: For roasting, choose firm and starchy potatoes like Russet, Yukon Gold, or Idaho. For boiling, use waxy potatoes like Red Bliss, New, or Fingerling. For mashed potatoes, opt for starchy potatoes like Russet or Yukon Gold.
- Cut Potatoes Uniformly: To ensure even cooking, cut potatoes into uniform sizes. This will help them cook evenly and prevent some pieces from being overcooked while others are undercooked.
- Season Potatoes Generously: Don't be shy with seasonings! Salt, pepper, garlic powder, onion powder, paprika, and dried herbs like thyme or rosemary are all great options for roasted, boiled, or mashed potatoes.
- Use High-Quality Olive Oil: For roasting and frying potatoes, use a high-quality extra virgin olive oil. It will add a delicious flavor and help prevent the potatoes from sticking to the pan.
- Roast Potatoes at High Temperature: To achieve crispy and golden-brown roasted potatoes, preheat your oven to a high temperature (400°F or higher) and roast the potatoes for at least 30 minutes, stirring occasionally.
- Boil Potatoes in Salted Water: When boiling potatoes, add a generous amount of salt to the water. This will help enhance the flavor of the potatoes and prevent them from becoming bland.
- Mash Potatoes with Butter and Milk: For creamy and fluffy mashed potatoes, use a combination of butter and milk. Start with a small amount of each and adjust to your desired consistency.
Conclusion:
With these tips and tricks, you can elevate your potato game and create delicious and versatile dishes that will impress your family and friends.
