Time 33m

Number Of Ingredients 6

3 cups self-rising flour ((such as White Lily brand))
2 tablespoons granulated sugar
½ cup (1 stick) salted butter, cubed and chilled
1 ½ cups cold mashed cooked sweet potatoes
¾ cup cold whole buttermilk, plus more as needed
1 tablespoon salted butter, melted

Steps:

  • Lightly oil or grease a 10-inch cast iron skillet, or line with parchment paper. Set aside.
  • In a large bowl, whisk together self-rising flour and sugar.
  • Use a pastry blender or two forks to cut in the cold butter until the mixture is crumbly and some pea-size pieces of butter remain.
  • In a small bowl, whisk together mashed sweet potatoes and buttermilk. Stir the potato mixture into the flour mixture just until the dry ingredients are moistened. If the dough is too dry, add a little bit more buttermilk. If the dough is too sticky to work with, add a bit more flour.
  • Turn out the dough onto a lightly floured surface. Gently knead 4-6 times.
  • Press dough to 1-inch thickness.
  • Using a round biscuit cutter dipped in flour, cut out biscuits and arrange in the cast iron skillet. Roll out the scraps once, and cut additional biscuits if necessary. Do not continue rolling and cutting or you may end up with tough biscuits.
  • Place the skillet in the freezer for 10-15 minutes so that the dough can chill while you preheat the oven.
  • Preheat oven to 450°F.
  • Bake biscuits until golden brown and cooked through, about 15-20 minutes. Brush warm biscuits with melted butter and enjoy!

THOMAS JEFFERSON'S SWEET POTATO BISCUITS 1774

Thomas Jefferson's Sweet Potato Biscuits 1774 image

This recipe is from the National Constitution Center (NCC), Philadelphia PA. According to the NCC, Thomas Jefferson's biscuits were served at the first meeting of the First Continental Congress in 1774 and are served today at the famous City Tavern (built in 1773) located in Philadelphia's historic district at 2nd and Walnut Streets. These are a light, tasty biscuit (scone), with or without the pecans. I enjoy them with butter and honey. The nutrition can be improved by using a margarine instead of butter and leaving out the pecans.

VINTAGE SWEET POTATO BISCUITS WITH HONEY BUTTER

Time 35m

Yield about 15 biscuits

Number Of Ingredients 12

3/4 cup cooked mashed sweet potatoes
2/3 cup milk
1/4 cup (4 tablespoons) unsalted butter, melted
1 1/4 cups sifted bread flour, plus more for dusting
2 tablespoons baking powder
2 tablespoons light brown sugar
1/4 teaspoon ground cinnamon
Pinch freshly grated nutmeg
1/2 teaspoon kosher salt
1/2 cup (1 stick) unsalted butter, at room temperature
1/4 teaspoon kosher salt
3 tablespoons honey

Steps:

  • Preheat the oven to 450 degrees F.
  • Make the biscuits: Place the sweet potatoes, milk and melted butter in a large bowl and stir until thoroughly combined.
  • Set a sifter or fine-mesh sieve over a medium bowl. Resift the 1 1/4 cups flour into the bowl, then sift in the remaining dry ingredients and whisk together. Transfer the dry ingredients to the sweet potato mixture and stir just until a soft dough forms (it'll be pretty sticky).
  • Turn the dough onto a lightly floured board and toss until smooth. Roll out the dough 1/2 inch thick, then stamp out as many biscuits as you can (about 15) with a 1- to 1 1/2-inch floured biscuit cutter. Place the biscuits on a parchment-lined baking sheet. Bake until just golden brown, 15 to 20 minutes.
  • Meanwhile, make the honey butter: Simply whisk together the butter, salt and honey in a small bowl until smooth.
  • Serve the sweet potato biscuits warm with the honey butter.

Tips:

  • Use fresh sweet potatoes: Fresh sweet potatoes will give your biscuits the best flavor and texture. If you can't find fresh sweet potatoes, you can use frozen or canned sweet potatoes, but the flavor and texture will not be as good.
  • Boil the sweet potatoes until they are very soft: This will make them easy to mash and will help the biscuits to be light and fluffy.
  • Mash the sweet potatoes until they are very smooth: This will help the biscuits to be smooth and细腻.
  • Add the mashed sweet potatoes to the flour mixture gradually: This will help to prevent the biscuits from becoming tough.
  • Do not overmix the dough: Overmixing will make the biscuits tough.
  • Let the dough rest for at least 30 minutes before rolling it out: This will help the biscuits to rise and be more tender.
  • Bake the biscuits at a high temperature: This will help them to rise quickly and be crispy on the outside.

Conclusion:

Sweet potato biscuits are a delicious and easy-to-make treat. They are perfect for breakfast, lunch, or dinner. They can be served with butter, honey, or jam. They can also be used to make sandwiches or sliders. No matter how you choose to serve them, sweet potato biscuits are sure to be a hit!
