Tips:

  • Soak the split peas: Soaking the split peas for at least 30 minutes before cooking helps to soften them and reduce cooking time. You can also soak them overnight in the refrigerator for even softer peas.
  • Use a variety of vegetables: This recipe calls for carrots, celery, and onions, but you can also add other vegetables that you like, such as potatoes, turnips, or parsnips. You can even add a handful of frozen peas or corn near the end of cooking.
  • Add some herbs and spices: This recipe uses a simple combination of salt, pepper, and thyme, but you can also add other herbs and spices to taste. Some good options include rosemary, oregano, marjoram, or sage. You could also add a bay leaf or two.
  • Don't overcook the soup: Split pea soup is best when it is slightly thick and creamy, but not mushy. Once the peas are soft and the vegetables are tender, the soup is done.
  • Serve with a side of crusty bread or crackers: Split pea soup is a hearty and filling soup that is perfect for a cold winter day. Serve it with a side of crusty bread or crackers for a complete meal.
