1 teaspoon baking powder
3/4 cup butter, softened

1 tablespoon water

1 cup sugar (preferably natural cane)
2 1/4 cups sifted all-purpose flour
1/4 cup sour cream
3/4 teaspoon baking soda
1 teaspoon lemon extract
1 cup powdered sugar
1 1/2 tablespoons lemon juice
zest from 1/2 lemon

Steps:

  • Preheat oven to 350 degrees.
  • Cream the butter and sugar until smooth.
  • Add the flour, sour cream, baking soda and lemon extract and blend until smooth.
  • Divide dough in half and place each half on a piece of wax paper. Roll each section into a 2 inch log and freeze until firm.

  • Preheat oven to 350 degrees.
  • Line two baking sheets with parchment paper.
  • Cream butter, sugar and lemon zest until light and fluffy. Scrape the sides of the bowl.
  • Add the lemon juice and lemon extract. Mix until well combined.

2 eggs
2/3 c sugar
1 tsp vanilla extract
4 tsp grated lemon rind
6 Tbsp butter
2/3 c all purpose flour

  • 1. Preheat oven to 400 degrees
  • 2. In a bowl, beat eggs, sugar and vanilla for 3-4 minutes or until the mixture forms a ribbon when the beater is lifted. Keep beating and add the lemon rind (zest).
