THICK CRUST PIZZA CRUST

Easy to make thick crust pizza dough recipe. This is one of the easiest ways to make a delicious thick crust pizza for making a pan pizza or any type of pizza you like!

Provided by Andrea

Categories     Main Course

Number Of Ingredients 13

2 1/2 cups all purpose flour
1 teaspoon salt
1 teaspoon sugar
1 tablespoon instant yeast
1 cup warm water
1 tablespoon olive oil
2-3 tablespoons olive oil
1 teaspoon Italian seasoning (oregano, basil, parsley)
1/4 teaspoon garlic powder
dash salt
1/2 cup tomato pizza sauce
1 cup shredded mozzarella cheese
1/4 cup fresh grated parmesan cheese

Steps:

  • Combine the first 4 dry ingredients in a large bowl. I prefer to use the Kitchen Aid mixer.
  • Combine water and oil, then add to the dry ingredients. I use my KitchenAid mixer to mix then use the dough hook to knead for about 5 minutes. You can mix by hand then knead on a lightly floured surface until the dough is smooth and elastic.
  • Grease a bowl with olive oil and put ball of dough in it. Toss it around to coat. Cover the bowl with plastic wrap and let rise 20 minutes. I use the same mixer bowl so I don't dirty another dish. In a rush, I sometimes skip this rise. The dough will still be good, just not as thick or pliable.
  • Grease a 12" or 16" pizza pan and spread dough out with your hands on the pan. Don't use a rolling pin. Let rise for 15 more minutes.
  • Top pizza with olive oil, Italian spices, garlic powder, salt. Then add your favorite pizza sauce, mozzarella cheese, toppings and parmesan cheese.
  • Bake at 450 degrees for 11-15 minutes.

Time 1h50m

Yield 15

Number Of Ingredients 6

2 ¼ teaspoons active dry yeast
½ teaspoon brown sugar
1 ½ cups warm water (110 degrees F/45 degrees C)
1 teaspoon salt
2 tablespoons olive oil
3 ⅓ cups all-purpose flour

Steps:

  • In a large bowl, dissolve the yeast and brown sugar in the water, and let sit for 10 minutes.
  • Stir the salt and oil into the yeast solution. Mix in 2 1/2 cups of the flour.
  • Turn dough out onto a clean, well floured surface, and knead in more flour until the dough is no longer sticky. Place the dough into a well oiled bowl, and cover with a cloth. Let the dough rise until double; this should take about 1 hour. Punch down the dough, and form a tight ball. Allow the dough to relax for a minute before rolling out. Use for your favorite pizza recipe.
  • Preheat oven to 425 degrees F (220 degrees C). If you are baking the dough on a pizza stone, you may place your toppings on the dough, and bake immediately. If you are baking your pizza in a pan, lightly oil the pan, and let the dough rise for 15 or 20 minutes before topping and baking it.
  • Bake pizza in preheated oven, until the cheese and crust are golden brown, about 15 to 20 minutes.

PIZZA DOUGH PRETZELS

Pizza Dough Pretzels image

When you suddenly get a craving for homemade soft pretzels and you're not at the mall, you won't need to wait for dough to rise if you use store-bought pizza dough! Serve, of course, with mustard.

Time 47m

Yield 6

Number Of Ingredients 6

¼ cup all-purpose flour, or more as needed
1 (16 ounce) package refrigerated pizza crust
1 tablespoon cornmeal, or as needed
6 cups water
⅓ cup baking soda
coarse salt

Steps:

  • Lightly flour a work surface. Place dough on flour and sprinkle more on top. Begin to knead dough, kneading about 2 tablespoons flour into dough until it is soft and supple but not too sticky, 5 to 10 minutes. Cover with a large bowl and allow dough to rest and come to room temperature, 15 to 20 minutes.
  • Preheat oven to 400 degrees F (200 degrees C). Line a rimmed baking sheet with parchment paper and sprinkle lightly with cornmeal.
  • Place water in a deep skillet. Whisk in baking soda to create an alkaline bath. Bring to a simmer over medium-high heat. Adjust heat to keep water at a low simmer while you shape the dough.
  • Dust dough with a sprinkling of flour as needed so that dough does not stick to work surface. Flatten slightly and divide into 6 equal pieces. Shape each piece into a round dough ball.
  • Shape each dough ball into a disk, thinner in the middle, thicker around the edges. Poke a hole in the center. Gently keep pulling and stretching until you've achieved a round pretzel shape that's not too thick.
  • Transfer pretzels (in batches if necessary) to simmering alkaline bath. Boil about 30 seconds per side. Transfer to prepared sheet with slotted spoon. Immediately sprinkle with coarse salt while pretzels are still wet and sticky. Let rest 5 to 10 minutes before baking.
  • Place on center rack in preheated oven until beautifully browned, and stretch marks have formed, about 20 minutes. Exact times will depend on the specific size and shape of your pretzel.
  • Transfer to a rack to cool a bit.

Tips:

  • Use bread flour or a combination of bread flour and all-purpose flour: Bread flour has a higher protein content than all-purpose flour, which results in a chewier crust.
  • Autolyse the dough: Autolysing is the process of mixing the flour and water together and letting it rest for a period of time before adding the yeast and salt. This allows the flour to absorb the water and develop gluten, which results in a stronger, more elastic dough.
  • Use a stand mixer or food processor to knead the dough: Kneading the dough by hand can be tiring, so using a stand mixer or food processor makes the process much easier.
  • Let the dough rise twice: The first rise should be for about 1 hour, or until the dough has doubled in size. The second rise should be for about 30 minutes, or until the dough has risen again by about half.
  • Bake the pizza at a high temperature: The higher the temperature, the crispier the crust will be. Most pizzas should be baked at around 450°F (230°C).
  • Use a pizza stone or baking sheet: A pizza stone will help to create a crispy crust, while a baking sheet will give you a softer crust.
  • Add your favorite toppings: Once the crust is baked, you can add your favorite toppings and bake the pizza for a few more minutes until the cheese is melted and bubbly.

Conclusion:

With these tips, you can make a delicious thick-crust pizza at home that will rival any pizzeria. So next time you're in the mood for pizza, give this recipe a try!
