Tips:

  • Prep your veggies in advance: Chopping and dicing your vegetables beforehand will save you time and hassle when you're ready to start cooking.
  • Use a variety of vegetables: This will give your soup a more complex flavor and texture. Some good options include carrots, celery, potatoes, onions, and broccoli.
  • Don't overcrowd the pan: When you're browning your vegetables, make sure to give them enough space so that they can brown evenly. If you overcrowd the pan, they'll steam instead of brown.
  • Use a good quality broth: The broth is the base of your soup, so it's important to use a good one. Look for a broth that is low in sodium and has a rich flavor.
  • Season your soup to taste: Once your soup is finished cooking, taste it and adjust the seasonings as needed. You may want to add more salt, pepper, or herbs.

This thick and creamy upside-down veggie and dumpling soup is a hearty and flavorful meal that's perfect for a cold winter day.
