Time 35m

Yield 9 squares, 9 serving(s)

Number Of Ingredients 9

1 cup milk
1 teaspoon shortening
1/4 cup butter, melted
1 large egg, separated
1 1/4 cups yellow cornmeal
1 cup all-purpose flour
1/2 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt

Steps:

  • Heat oven to 400³F.
  • Grease bottom square pan, 8x8x2 inches, with shortening.
  • Beat milk, butter and egg yolk in large bowl with hand beater or wire whisk. Clean beater and whip egg white in a small bowl till stiff. Set aside.

  • Pour into pan.
  • Bake 20 minutes or until golden brown and toothpick inserted in center comes out clean.
  • Serve warm.

Tips:

  • Use buttermilk for extra fluffiness. Buttermilk reacts with the baking soda to create a light and airy texture.
  • Don't overmix the batter. Overmixing can result in a tough, dense cornbread.
  • Bake the cornbread in a hot oven. A hot oven will help the cornbread to rise quickly and evenly.
  • Let the cornbread cool slightly before serving. This will help to prevent the cornbread from crumbling.

Conclusion:

This recipe is the ultimate in fluffy cornbread. It's moist, flavorful, and has a perfect crumb. Whether you're serving it with a bowl of chili or just enjoying it on its own, this cornbread is sure to be a hit. In addition to the tips above, here are a few other things to keep in mind when making cornbread:
  • Use fresh cornmeal. Fresh cornmeal will give your cornbread the best flavor.
  • Be sure to measure your ingredients correctly. Incorrect measurements can result in a cornbread that is too dry, too wet, or too dense.
  • Don't be afraid to experiment with different ingredients. You can add cheese, bacon, jalapenos, or even fresh herbs to your cornbread for a unique twist.
With these tips in mind, you're sure to make the best cornbread you've ever tasted.
