Time 45m

Yield 4 servings

Number Of Ingredients 22

3 eggs
½ cup heavy cream
2 Tbsp granulated sugar
1 tsp ground cinnamon
½ tsp ground nutmeg
1 tsp vanilla extract
Zest of one orange
1 Tbsp clarified butter
8 slices Challah bread, cut into 1-in thick slices
Apple Cranberry Compute (recipe follows)
Pecan Compound Butter (recipe follows)
Maple Syrup Reduction
¼ cup powdered sugar, for garnish
1 cup fresh or frozen cranberries
½ cup freshly squeezed orange juice
3 Tbsp granulated sugar
Zest of one orange
3 Granny Smith apples, peeled and cut into ½-in dice
½ cup pecans
Kosher salt
2 sticks unsalted butter, at room temperature
1 cup maple syrup

Steps:

  • Whisk together the eggs and heavy cream in a large bowl and add the granulated sugar, cinnamon, nutmeg, vanilla and orange zest and whisk again.
  • Heat some clarified butter in a large skillet over medium-high heat. Dip four slices of the Challah into the egg mixture until soaked through. Immediately place each slice onto the hot skillet. Fry until golden brown, 2 to 3 minutes per side, and set aside. Repeat with the remaining 4 slices of bread.
  • Cut each piece of French toast in half diagonally and plate four halves per serving. Top with Apple Cranberry Compote, a scoop of Pecan Compound Butter and a light drizzle of the Maple Syrup Reduction. Dust with powdered sugar and enjoy!
  • Add the cranberries, orange juice, sugar, orange zest and apples to a large skillet and cook over medium heat for about 10 minutes, or until the apples are cooked as desired.
  • Preheat the oven to 325 °F. Place the pecans on a cookie sheet and bake for about 10 minutes, or until they become aromatic and heated through. Salt immediately while still hot. Allow the pecans cool completely.
  • Once the pecans are completely cool, chop them up into small pieces and add to the butter, until incorporated. Set aside until ready to serve, or refrigerate.
  • Place the maple syrup in a small saucepan and heat over low heat until reduced by one-half. Use sparingly to top off French toast.

DOUGHNUT FRENCH TOAST

Doughnut French Toast image

My weaknesses are mainly savoury - think salt and vinegar crisps/potato chips or cheese and biscuits/crackers - but there are times when only a doughnut will do. This can get desperate late at night when the shops are shut, and even if they weren't, none of them sell the kind of doughnuts I dream of. This is my way of assuaging my appetite, appeasing my need or, perhaps more accurately, feeding my addiction. Hot chocolate on the side is always worth considering, but just - just! - by itself this is sublime succour.

STRAWBERRY CHEESECAKE FRENCH TOAST

Strawberry Cheesecake French Toast image

At just 9 years old, Gabriella says she already feels destined to work in the food world. She's off to a great start: Our recipe testers thought her strawberry cheesecake-stuffed French toast was genius. "Cooking and baking are my passion," Gabriella says. "I like to see the smiles on people's faces when they eat my food."

Time 40m

Yield 10 pieces of French toast

Number Of Ingredients 13

Butter or cooking spray, for the pan
10 Hawaiian sweet rolls
3 large eggs
1/3 cup milk
1 tablespoon brown sugar
1 teaspoon vanilla extract
8 ounces cream cheese
1/2 teaspoon grated lemon zest
2 tablespoons honey
1/4 cup strawberry jam
2/3 cup diced strawberries, plus more for topping
1 tablespoon granulated sugar
Confectioners' sugar and maple syrup, for topping

Steps:

  • Preheat the oven to 350˚ F. Grease an 8-inch round baking dish with butter or cooking spray and set aside. Cut 1-inch-wide and 1-inch-deep holes in each roll. Whisk together the eggs, milk, brown sugar and vanilla in a medium bowl. Dip each roll in the egg mixture and place in the baking dish.
  • Beat the cream cheese with the lemon zest, honey and jam in a bowl with a mixer. Fold in the strawberries. Place the mixture in a piping bag and fill each hole in the rolls with the cream cheese mixture. Sprinkle the granulated sugar over the top of the rolls.
  • Bake for 15 to 20 minutes, or until the tops of the rolls are crisp and golden brown. Serve with more strawberries, confectioners' sugar and syrup for topping.

Tips:

  • Use a sturdy bread for your French toast, such as a sourdough or brioche. This will help the bread hold up to the custard and prevent it from becoming soggy.
  • For a richer flavor, use a mixture of milk and cream in your custard.
  • Add a pinch of salt to your custard to help balance out the sweetness.
  • If you don't have time to let your bread soak in the custard overnight, you can soak it for at least 30 minutes.
  • Cook your French toast over medium heat so that it has time to cook through without burning.
  • Serve your French toast immediately with your favorite toppings, such as butter, syrup, fruit, or whipped cream.

Conclusion:

French toast is a classic breakfast dish that can be enjoyed by people of all ages. It's a versatile dish that can be made with a variety of different breads and toppings. Whether you like your French toast simple or decadent, there's a recipe out there that's perfect for you. So next time you're looking for a delicious and easy breakfast, give French toast a try.
