RESTAURANT-STYLE SALSA

Restaurant-Style Salsa image

Food Network's Ree Drummond shares her recipe for homemade restaurant-style salsa that the whole family will love!

Provided by Ree Drummond : Food Network

Categories     condiment

Time 1h15m

Yield 12 servings

Number Of Ingredients 10

Two 10-ounce cans diced tomatoes and green chiles, such as Rotel
One 28-ounce can whole tomatoes with juice
1/2 cup fresh cilantro leaves (or more to taste!)
1/4 cup chopped onion
1 clove garlic, minced
1 whole jalapeno, quartered and sliced thin, with seeds and membrane
1/4 teaspoon ground cumin
1/4 teaspoon salt
1/4 teaspoon sugar
1/2 whole lime, juiced

Steps:

  • Combine the diced tomatoes, whole tomatoes, cilantro, onions, garlic, jalapeno, cumin, salt, sugar and lime juice in a blender or food processor. (This is a very large batch. I recommend using a 12-cup food processor, or you can process the ingredients in batches and then mix everything together in a large mixing bowl.)
  • Pulse until you get the salsa to the consistency you'd like. I do about 10 to 15 pulses. Test seasonings with a tortilla chip and adjust as needed.
  • Refrigerate the salsa for at least an hour before serving.

Time 30m

Number Of Ingredients 9

6 medium size vine ripened tomatoes (stem removed)
2 jalapeno peppers
1 poblano pepper
1 cup green onion (diced)
1 lime (juice of)
1 cup canned diced tomatoes
1 cup chopped fresh cilantro
2 cloves garlic (minced)
1 tbsp chicken bouillon powder or sea salt

Steps:

  • Heat a large skillet to medium high heat. Place tomatoes and peppers in the skillet.
  • Continue to saute, rotating the vegetables occasionally, so several sides begin to blister. See photos above. This will take around 20 minutes. Set aside to cool.
  • Once cooled, chop off the stems of the peppers, and remove the seeds from the jalapeño (you can also keep some seeds for more heat in your salsa). Cut the vegetables into large pieces.
  • Place tomatoes, peppers, onions, lime, and canned tomatoes into a blender and pulse quickly until just mixed (about 5 seconds). Add garlic, cilantro, and bouillon. Pulse for another 15 seconds until well blended but chunky.
  • Place in a large bowl and refrigerate until cooled before serving. Serve with your favorite Mexican dish or with chips.

THE PERFECT SALSA

My mother-in-law has past this on and I just thought I would share this with all of you. This is a staple in my house as I make it at least once a week.

Categories     Sauces

Time 17m

Yield 8 serving(s)

Number Of Ingredients 7

2 large tomatoes or 5 -6 roma tomatoes
3 -5 jalapenos (depending a heat preference)
1 medium onion (cut in half)
cilantro (handful)
2 tablespoons garlic (minced)
2 tablespoons chili powder
2 tablespoons ground cumin

Steps:

  • Bring large pot of salted water to rolling boil add tomatoes, jalapenos, onion ect. (you can add any kind of peppers you like).
  • Boil until vegetables get soft and tomatoes start to peel.
  • Then drain.
  • In blender combine the handful of cilantro and dry ingredient (I usually just eye ball it), then add the vegetables.
  • Bend to your liking. The longer you blend the thinner the salsa. And enjoy!
  • NOTE: For milder salsa seed the jalapenos before boiling.

Tips:

  • Choose the ripest tomatoes possible. Ripening concentrates the tomato's sugars and acids, resulting in a more flavorful salsa.
  • Use a variety of tomatoes. This will give your salsa a more complex flavor. Some good options include Roma tomatoes, cherry tomatoes, and heirloom tomatoes.
  • Roast your tomatoes before making salsa. Roasting intensifies the tomatoes' flavor and gives the salsa a smoky flavor.
  • Use fresh herbs. Fresh herbs, such as cilantro, basil, and oregano, will brighten the flavor of your salsa.
  • Don't be afraid to experiment. There are many different ways to make salsa. So feel free to experiment with different ingredients and flavors until you find a recipe that you love.

Conclusion:

Salsa is a delicious and versatile condiment that can be enjoyed in many different ways. Whether you're using it as a dip for chips, a topping for tacos, or a marinade for chicken, salsa is sure to add flavor to your meal. So next time you're looking for a quick and easy way to add some flavor to your food, reach for a bowl of salsa.
