PASTA NAPOLITANA

Pasta Napolitana image

This is the ultimate meat lovers sauce and is my copycat version of The Cheesecake Factory's pasta. Rich and hearty, with tremendous flavors, this pasta Napolitana will disappear quickly. I always make extra sauce, as it freezes very well. —John Pittman, Northampton, Pennsylvania

1/2 to 1 teaspoon crushed red pepper flakes
1 teaspoon Worcestershire sauce
Hot cooked spaghetti
Grated Parmesan cheese

Tips:

  • Use Authentic Ingredients: Prioritize high-quality, authentic ingredients to create a genuine Neapolitan pizza experience. Opt for Italian tomatoes, fresh mozzarella, and Caputo "00" flour.
  • Master the Art of Kneading: Achieving the perfect dough texture is crucial. Mix the ingredients thoroughly, then knead the dough by hand for at least 10 minutes. This develops the gluten and creates a smooth, elastic dough.
  • Proper Fermentation: Allow the dough sufficient time to ferment and rise. This process enhances the flavor and texture of the pizza. Follow the recipe's specific fermentation instructions for optimal results.
  • Achieve the Right Heat: Use a pizza oven or a very hot conventional oven to mimic the high temperatures of a traditional wood-fired oven. Aim for temperatures between 850°F and 950°F to create a crispy crust.
  • Less is More: Don't overload your pizza with toppings. The beauty of Neapolitan pizza lies in its simplicity. Use a few high-quality ingredients to allow each flavor to shine through.
  • Cook Quickly: Neapolitan pizzas cook rapidly due to the high oven temperatures. Keep an eye on the pizza to prevent overcooking. The ideal cooking time is usually around 90 seconds to 2 minutes.
