SAVORY CHICKEN POT PIE PAULA DEEN

Savory Chicken Pot Pie Paula Deen image

I watched Paula Deen and her guest, Rodney Henry, make this and it looked soooo good! Plus they had such a good time making it. LOL I know there are quite a few good chicken pot pie recipes out there, but when I have the time, I love to roast this chicken and make this home-made pie crust. Otherwise, using a store-bought chicken and pie crust works just fine. From Food Network. Hope you enjoy! UPDATE: I meant to correct the measurements of the crust, I have done so now. Sorry for this mishap.

If you are partial to sweet potatoes (as I am), substitute them for pumpkin. From The Lady & Sons Savannah Country Cookbook and then updated from her Kitchen Classics to include 2 more eggs (original recipe just called for 3 whole eggs, separated).

BLUEBERRY CREAM PIE

Blueberry Cream Pie image

Categories     Bake     Blueberry

Yield serves 6-8

Number Of Ingredients 7

3/4 cup chopped pecans or walnuts
One 9-inch deep-dish pie crust (thawed if frozen)
Two 3-ounce packages cream cheese, at room temperature
1 cup confectioners' sugar
1 cup heavy cream
1/4 cup granulated sugar
One 21-ounce can blueberry pie filling

Steps:

  • Press the chopped nuts into the bottom of the pie crust. Bake as directed on the package and let cool. Beat the cream cheese with the confectioners' sugar. Beat the heavy cream with the granulated sugar until it forms soft peaks. Fold the whipped cream into the cream cheese mixture. Spoon this mixture into the cooled pie shell and top with blueberry pie filling. Refrigerate until well chilled.

Tips:

  • Use fresh blueberries. Fresh blueberries have the best flavor and texture for this pie.
  • Don't overmix the pie dough. Overmixing the dough will make it tough.
  • Chill the pie dough before baking. This will help the dough to hold its shape and prevent it from shrinking.
  • Blind bake the pie crust. This will help to prevent the crust from becoming soggy.
  • Don't overcook the blueberry filling. Overcooked blueberries will become tough and lose their flavor.
  • Let the pie cool completely before serving. This will allow the filling to set and the flavors to meld.

Conclusion:

The Lady Son's Blueberry Cream Pie is a classic Southern dessert that is perfect for any occasion. With its flaky crust, creamy filling, and sweet blueberries, this pie is sure to be a hit with everyone who tries it. So next time you're looking for a delicious and easy-to-make pie, give this recipe a try!
