CLASSIC MEATLOAF

Good meatloaf is about as comforting as comfort food gets. Thankfully, meatloaf doesn't have to be complex to be good. It just needs to be tender (from breadcrumbs soaked in milk and gentle handling) and flavorful (from onion, garlic, and ketchup).

Time 1h10m

Number Of Ingredients 9

3 slices white sandwich bread
1/3 cup whole milk
1 1/2 pounds ground beef chuck
1/2 pound ground pork
1/2 medium onion, grated
2 garlic cloves, minced
1 large egg
1/2 cup ketchup
Coarse salt and ground pepper

Steps:

  • Preheat oven to 400 degrees. Line a baking sheet with aluminum foil or parchment paper. Place bread in food processor; pulse until fine crumbs form. Transfer to a small bowl; stir in milk. Set aside, about 10 minutes, stirring occasionally.
  • Meanwhile, in a large bowl, combine beef, pork, onion, garlic, egg, 1/4 cup ketchup, 1 1/2 teaspoons salt, and 1/4 teaspoon pepper. Add bread-milk mixture, and mix very gently with a fork (do not overmix).
  • Place meat mixture on prepared baking sheet, and form into a loaf about 9 inches long and 4 to 5 inches wide.
  • Bake, brushing twice with remaining 1/4 cup ketchup during baking, until an instant-read thermometer registers 160 degrees, 45 to 55 minutes. Let meatloaf rest 10 minutes before slicing and serving.

THE "I DON'T LIKE MEATLOAF" MEATLOAF

The

This meatloaf is really good. The sausage gives it an added kick, and I've served it to several people and received "I don't like meatloaf, BUT..." responses.

Time 1h20m

Yield 6-8 serving(s)

Number Of Ingredients 7

2 lbs ground beef
1 lb pork sausage
1 cup breadcrumbs
3 teaspoons cream of mushroom soup
1/2 cup ketchup
2 eggs
2 teaspoons Worcestershire sauce

Steps:

  • Preheat oven to 350 degrees.
  • Combine all ingredients in a large bowl- mix together well (using hands, as gross as it may be).
  • Mold mixture into a"loaf", place into 8x11 baking dish (I try to make sure the meatloaf doesn't touch the sides, it makes for easier cleanup).
  • Spread more ketchup on the top of the meatloaf.
  • Bake at 350 for 50 minutes to an hour.
  • My favorite sides to go with this are mashed potatoes and green beans.
  • You can be creative with this recipe- use spicy sausage if you like spicy; sage if you like that taste, etc You can also add chopped onions, green peppers, or salsa- I don't, but only because my kids won't eat it.
  • (Bonus: if your kids are veggie haters like mine- they never even notice the mushrooms).

Tips:

  • Choose high-quality ground beef: Opt for a blend of chuck and sirloin for a flavorful and juicy meatloaf.
  • Use a variety of seasonings: Experiment with different herbs and spices to create a unique flavor profile.
  • Don't overmix the meatloaf mixture: Overmixing can result in a tough and dense meatloaf.
  • Use a loaf pan with a raised center: This will allow the grease to drain away from the meatloaf as it bakes.
  • Bake the meatloaf at a high temperature initially: This will help to create a crispy crust.
  • Reduce the oven temperature after the initial baking period: This will help to ensure that the meatloaf cooks evenly throughout.
  • Let the meatloaf rest before slicing: This will allow the juices to redistribute throughout the meatloaf, resulting in a more tender and flavorful dish.

Conclusion:

The "I Don't Like Meatloaf" Meatloaf is a delicious and versatile dish that is sure to please everyone at the table. With its flavorful blend of ground beef, seasonings, and vegetables, this meatloaf is a hearty and satisfying meal.
