SMASH BURGERS
Now is not the time to cut calories or skimp on salt. Go for ground chuck that is at least 80/20. If you can find a blend with ground brisket or short rib, all the better. The best burger comes with being liberal with kosher salt-it is beef's best friend. -James Schend, Pleasant Prairie, Wisconsin

Steps:
- For the sauce: To a small saucepan over low heat add the oil and garlic and cook until fragrant. Add the tomato paste and seasoning, and mash with the back of a wooden spoon. Stir in the crushed tomatoes and bring to a simmer. Simmer for 15 minutes, then remove from the heat.
- For the burger: Preheat grill to medium-high heat. Preheat oven to 550 degrees F with pizza stone on the middle rack of the oven.
- Form the meat into four 4-ounce patties and sprinkle both sides with salt and pepper. Grill until medium, then remove from the heat and place on a paper-towel-lined plate.
- Divide the pizza dough into four 4-ounce balls. Press out each ball on a floured pizza peel to about a 5-inch round. Top each with a slice of scamorza, a couple slices of pepperoni, then 1 burger patty and 1 tablespoon of pizza sauce. Fold the dough over the burger as if making a large dumpling. Brush with olive oil. Bake on the pizza stone in the oven until golden brown, 8 to 10 minutes. Serve with extra tomato sauce on the side to dip.
Tips:
- Use fresh, high-quality ingredients. This will make a big difference in the flavor of your burgers.
- Don't overwork the meat. Overworking the meat will make it tough. Mix the ingredients gently until just combined. Some recipes suggest chilling in a fridge for 30 minutes before cooking.
- Make sure the burgers are cooked evenly. Use a meat thermometer to ensure that the burgers are cooked to your desired doneness.
- Let the burgers rest before serving. This will help the juices redistribute throughout the burger, making it more flavorful and juicy.
- Don't be afraid to experiment. There are endless ways to customize your burgers. Try different toppings, sauces, and buns to find your perfect combination.
Conclusion:
The recipes in this article will help you make delicious burgers that are sure to be a hit with your family and friends. With a little practice, you'll be able to make perfect burgers every time.
