THE BAKED POTATO

Categories     side-dish

Time 1h10m

Yield 1 potato per person

Number Of Ingredients 4

1 large russet potato (If it looks like Mr. Potato Head®, you've got the right one.)
Canola oil to coat
Kosher salt
Optional toppings, such as butter, sour cream, shredded Cheddar and/or scallions

Steps:

  • Heat oven to 350 degrees and position racks in top and bottom thirds. Wash potato (or potatoes) thoroughly with a stiff brush and cold running water. Dry, then using a standard fork poke 8 to 12 deep holes all over the spud so that moisture can escape during cooking. Place in a bowl and coat lightly with oil. Sprinkle with kosher salt and place potato directly on rack in middle of oven. Place a baking sheet on the lower rack to catch any drippings.
  • Bake 1 hour or until skin feels crisp but flesh beneath feels soft. Serve by creating a dotted line from end to end with your fork, then crack the spud open by squeezing the ends towards one another. It will pop right open. But watch out, there will be some steam. Add toppings if using.

Delicious and simple potatoes...great as a side for barbecued meats. I found this in the Daily Herald, it's originally from a suburban Chicago catering company.

BAKED POTATOES

Recipes for baked potatoes exist across the archives of The Times. This is the battle-tested best. Adorn the result with toppings: sour cream, minced chives, crumbled bacon, chopped jalapeño, cauliflower florets, crab meat dressed in lemon juice. The potatoes are a blank canvas, though delicious on their own.

Tips:

  • To achieve a crispy skin, pierce the potatoes with a fork before baking. This will allow steam to escape and create a golden brown crust.
  • Rubbing the potatoes with olive oil or melted butter before baking will also help to crisp up the skin and add flavor.
  • For a more flavorful baked potato, try using a variety of seasonings. Some popular options include salt, pepper, garlic powder, onion powder, and paprika.
  • If you want to add some extra moisture to your baked potatoes, try wrapping them in foil before baking. This will help to keep them from drying out.
  • Once the potatoes are baked, be sure to let them cool for a few minutes before cutting into them. This will help to prevent the potatoes from crumbling.
