This recipe is one of the simplest you'll find, and the yummiest for sure! (It's sweet enough to be a dessert.) I have not met one person who did not love this. The sweetened condensed milk is what makes this recipe. See my note on how to cook the sweet potatoes.

  • For the perfect sweet potato casserole, choose sweet potatoes that are firm and free of blemishes.
  • Baking the sweet potatoes whole in their skin helps to preserve their moisture and flavor.
  • Once the sweet potatoes are baked, let them cool slightly before handling them.
  • Use a potato ricer or food mill to create a smooth and lump-free sweet potato puree.
  • Be careful not to overmix the casserole batter, as this can make it tough.
  • When baking the casserole, cover it with foil for the first 30 minutes to prevent the top from getting too brown.
  • Uncover the casserole for the last 15 minutes of baking to allow the top to brown and crisp.
  • Serve the casserole warm, topped with your favorite toppings, such as marshmallows, pecans, or whipped cream.
