5 scallions, trimmed and finely chopped (about 3/4 cup)
2 tablespoons minced garlic
Kosher salt and black pepper
2 pounds baby spinach (32 ounces)
2 large eggs
1 1/4 cups crumbled feta (6 ounces)
1/2 cup grated Parmesan (2 ounces)
1/2 cup chopped parsley
1/2 cup/115 grams unsalted butter (1 stick), melted
8 sheets frozen phyllo dough, thawed and halved crosswise

Steps:

  • In a large pot, heat oil over medium. Add onion, scallions and garlic, season with salt and pepper and cook, stirring occasionally, until softened, 5 minutes.

1 tablespoon butter
8 ounces mushrooms, sliced
1 cup jarlsberg cheese, grated
2 (10 ounce) packages spinach souffle, defrosted (I use Stouffers)

Steps:

  • Preheat oven to 400°F.
  • Place the pie crust into a pie plate.
  • Sauté mushrooms in Butter (I use Smart Balance and it comes out great).
  • Pour mushrooms into crust and spread evenly.
