1 (10.5 oz) can condensed cream of mushroom soup, NOT diluted
2 cups beef broth
1 cup uncooked long grain white rice
¼ teaspoon garlic powder
¼ teaspoon dried chives
¼ teaspoon onion powder
4 thick cut pork chops ((bone-in or boneless is fine))
1 (1 ounce) packet Lipton Onion Soup & Dip Mix (or other seasoning of choice, see notes below)
Optional garnish: chopped fresh parsley or basil

Steps:

  • Preheat oven to 350°F. Spray a 9 x 13-inch baking dish with cooking spray.
  • Whisk together the soup, broth, rice, garlic powder, dried chives, and onion powder. Transfer to the prepared dish.
  • Pat the pork chops dry; place on top of the rice. Sprinkle onion soup mix over the pork chops, to taste. If you don't like a strong onion flavor or if you don't want the chops too salty, use just a portion of the seasoning (not the whole packet).
  • Cover dish with foil and bake for 30 minutes. Check the pork chops at this point. If they are done (and have reached an internal temperature of 145°F), remove them from the dish, cover with foil, and set aside to rest. Give the rice a stir. The rice will not be tender yet, so cover the dish again and return to the oven for about 25-30 more minutes, or just until rice is tender and most of the liquid is absorbed. Fluff the rice with a fork and serve with the pork chops. Garnish with herbs, if desired.

1 tablespoon vegetable oil
6 boneless pork chops
1 (10.75 ounce) can condensed cream of mushroom soup
1 cup milk
4 potatoes, thinly sliced
½ cup chopped onion
1 cup shredded Cheddar cheese

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Heat oil in a large skillet over medium high-heat. Place the pork chops in the oil, and sear.
  • In a medium bowl, combine the soup and the milk. Arrange the potatoes and onions in a 9x13 inch baking dish. Place the browned chops over the potatoes and onions, then pour the soup mixture over all.

This was given to me when I got my very first job after my 1st son was born. I tried very hard to become a good cook. This has been a hit with my mom, mother-in-law and friends. It is a one dish meal that aims to please just about anyone. Enjoy!!

Number Of Ingredients 9

2 (10 1/2 ounce) cans cream of mushroom soup (or whatever kind you like)
1/2 cup milk or 1/2 cup water
6 -8 pork chops (already cooked)
1 onion, diced (optional if you don't like them)
6 potatoes, sliced about 1 inch thick
8 slices Velveeta cheese
2 (6 ounce) boxes prepared stuffing (follow box directions, make ahead on stove or in microwave, then set aside)
nonstick cooking spray
aluminum foil

Steps:

  • In a 13 x 9 pan, spray w/ non stick spray.
  • Preheat oven to 350 degrees.
  • Place potatoes on bottom of pan then place.
  • onions and then cheese, salt and pepper, ( this makes the potatoes Augratin).
  • Place pre-cooked chops on top of the cheese.
  • Add the soup to either water or milk and pour over the chops,add just enough liquid to thin out but still have a thick consistency.
  • Cover with foil.
  • Cook for about 45 minutes or until potatoes are done.
  • Top with the stuffing and return to oven uncovered for additional 15 minutes.
  • Try to serve by scooping out the chop with the potatoes and it will be a nice serving.
  • Serve with a veggie or salad. Enjoy!
