THE BEST NO OIL WARM EGG DRESSING OVER GREENS
Now this is a fairly classic dressing. But I love it served warm over my favorite salad greens. A mix of crunchy iceberg, romaine and red leaf are my favorites - it is really all about the dressing. Toppings ... I prefer fresh slices of tomato, crumbles of bacon and thin slices of onion to me are a must, but olives, cucumbers, peppers, or pretty much anything you want is great with this salad. - Salad Greens -- Prepare your greens. Whatever you like. Tomato, bacon and onion are my favorites, but any of your favorites will work. This is about the dressing.
- Dressing -- I make this in a small tupperware container or small microwavable bowl. Add all the ingredients and mix well. Heat on medium (power 4 or 5) for 30 seconds and stir well. Then heat again on medium power same thing just 30 seconds at a time and mix well. You do not want do scramble the eggs. Just a couple of times in the microwave to heat up the dressing is all you need. It should be served warm NOT boiled.
- Serve -- Toss with the greens and ENJOY! One of my favorite dressings, and so easy.

- In a 6-qt. stockpot, heat 1 tablespoon lard over medium heat. Add onion and garlic; cook and stir until tender. Add ham hocks, water, seasoned salt, pepper flakes, and sugar. Bring to a boil. - Pull the leaf portions of the collard, mustard, and turnip greens away from the tough stems, and discard the stems. Gently wash the greens in warm water to remove all soil and sand. Partially fill a clean sink with warm water, and stir in 3 tablespoons of salt and 2 cups of chicken broth; allow greens to soak in the mixture for 10 minutes. Scoop up the greens and allow to drain in a colander; discard used chicken broth. Do not rinse the greens.
- Pour the remaining 2 cups of chicken broth into a large pot, and mix in the greens. Stir in vegetable oil, garlic, bacon bits, and sugar, and season with salt and black pepper. Bring to a boil, reduce heat to a simmer, and cook until the greens are tender, stirring occasionally, 45 minutes to 1 hour.
