THE BEST GREEN BEANS EVER

The Best Green Beans Ever image

Ree Drummond's Best Green Beans Ever recipe, from The Pioneer Woman on Food Network, starts with bacon grease and gains even more flavor from chicken stock.

Provided by Ree Drummond : Food Network

Categories     side-dish

Time 40m

Yield 6 servings

Number Of Ingredients 8

1 pound green beans
2 tablespoons bacon grease (can substitute 2 tablespoons butter)
2 cloves garlic, minced
1 large onion, chopped
1 cup chicken broth, plus more if needed
1/2 cup chopped red bell pepper
1/2 to 1 teaspoon kosher salt (can substitute regular table salt, use 1/4 to 1/2 teaspoon)
Ground black pepper

Steps:

  • Snap the stem ends of the green beans, or cut them off in a big bunch with a knife if you'd prefer.
  • Melt the bacon grease in a skillet over medium-low heat. Add the garlic and onions and cook for a minute. Then add the green beans and cook until the beans turn bright green, about a minute. Add the chicken broth, chopped red pepper, salt and pepper to taste. Turn the heat to low and cover the skillet with a lid, leaving the lid cracked to allow steam to escape. Cook until the liquid evaporates and the beans are fairly soft, yet still a bit crisp, 20 to 30 minutes. You can add more chicken broth during the cooking process, but don't be afraid to let it all cook away so the onions and peppers can start to caramelize.

GREEN BEAN BUNDLES

Green Bean Bundles image

I fixed these for my DD and her BF last night and they loved them, as did I. They are pretty easy to put together and the flavors blend well. The presentation plated is very nice. These can also be served as appetizers, cold. Use whole green beans. Can't wait to try these with fresh blanched green beans this summer.

Time 40m

Yield 2-3 serving(s)

Number Of Ingredients 5

1 (14 1/2 ounce) can green beans, drained
12 slices of smoked cooked ham, deli sliced thin
3 teaspoons brown sugar (use more to taste)
1 tablespoon butter
onion salt

Steps:

  • Preheat oven to 400 degrees.
  • Line a cookie sheet with aluminum foil.
  • Fold each slice of deli smoked ham in half.
  • Place 1/8 to 1/4 tsp brown sugar in center and spread a little with the back of your measuring spoon.
  • Place a thin slice of butter on top of the brown sugar.
  • Add 5-6 green beans (or enough so that the ham folds over nicely).
  • Sprinkle with onion salt.
  • Fold ham over green beans.
  • Place on cookie sheet, seam side down.
  • Repeat with remaining green beans.
  • Bake in oven at 400 degrees for 15-20 minutes or until ham is golden brown.

Tips:

  • Choose fresh, tender green beans: Look for beans that are bright green and snap easily when you bend them.
  • Trim the green beans: Remove the ends of the beans and any strings that run along the sides.
  • Blanch the green beans: This will help them retain their color and crispness. Bring a large pot of salted water to a boil, add the green beans, and cook for 2-3 minutes. Drain the beans and immediately transfer them to a bowl of ice water to stop the cooking process.
  • Wrap the green beans in bacon: This will add flavor and help to keep the beans moist during cooking.
  • Secure the bundles with toothpicks or skewers: This will help to keep the bundles intact during cooking.
  • Bake the green bean bundles: Preheat the oven to 400°F (200°C). Place the green bean bundles on a baking sheet and bake for 15-20 minutes, or until the bacon is cooked through and the beans are tender.
  • Serve the green bean bundles: These are a delicious side dish for any occasion. They can be served with a variety of dipping sauces, such as ranch dressing, honey mustard, or barbecue sauce.

Conclusion:

Green bean bundles are a simple and delicious side dish that can be enjoyed by people of all ages. They are easy to make and can be tailored to your own taste preferences. With a few simple ingredients and a little bit of time, you can create a dish that is sure to impress your family and friends. So next time you are looking for a new and exciting way to serve green beans, give these bundles a try. You won't be disappointed!
