My family often requests this tasty beef and broccoli stir fry. It's great because it combines tender beef and nutritious vegetables in one dish. We enjoy this broccoli beef recipe year-round but especially in summer, when I grow my own broccoli and onions. Plus, it doesn't heat up the kitchen. -Ruth Stahl, Shepherd, Montana

Everyone should have a good stir-fry in their weeknight rotation-this one will save you on a busy night!

Categories     weeknight meals     dinner     main dish     meat

Time 45m

Yield 4-6 servings

Number Of Ingredients 14

Kosher salt, to taste
12 oz. spaghetti or angel hair pasta
3 tbsp. toasted sesame oil
1/3 c. low-sodium soy sauce
2 tbsp. sugar
2 tbsp. rice vinegar
4 garlic cloves, minced
1 1/4 lb. sirloin steak (about 3/4 inch thick), thinly sliced against the grain
1 tsp. cornstarch
4 tbsp. vegetable oil
1 head broccoli, cut into small florets (peel and thinly slice the stalks, too)
1 8-ounce can sliced water chestnuts
1 red Fresno chile pepper, halved and thinly sliced
3 scallions, thinly sliced

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs. Drain, transfer to a bowl and toss with 1 tablespoon sesame oil.
  • Mix the soy sauce, sugar, vinegar, garlic, the remaining 2 tablespoons sesame oil and ¼ cup water in a small bowl. Toss 3 tablespoons of the mixture with the beef in a medium bowl. Whisk the cornstarch into the remaining soy sauce mixture.
  • Heat 2 tablespoons vegetable oil in a large skillet over medium-high heat. Add the broccoli and let brown on the bottom, 1½ minutes, then toss and continue cooking, tossing occasionally, until bright green, 3 to 5 minutes. Season lightly with salt. Remove to a baking sheet.
  • Add another 1 tablespoon vegetable oil to the skillet and heat until shimmering. Add half the meat and let brown on the bottom, 30 seconds, then turn the meat and cook until the other side browns a bit, another 30 seconds. Add to the baking sheet with the broccoli. Repeat with the remaining 1 tablespoon vegetable oil and meat.
  • Reduce the heat to medium. Add the water chestnuts and half the chile to the skillet and toss just to heat, 30 seconds. Stir the soy sauce-cornstarch mixture, add it to the skillet and bring it to a simmer.
  • Add the broccoli and meat with any accumulated juices to the skillet and toss to coat and heat through, about 1 minute. Serve over the pasta and top with the scallions and remaining chile.

SIMPLE BROCCOLI STIR-FRY

Simple Broccoli Stir-fry image

Stir-frying has stood the test of time. It's a wonderful way to cook small pieces of vegetables and meat quickly, without a lot of fat. Prepping your ingredients ahead of time and having them near your stovetop is the key to success. This recipe can be made in a large nonstick skillet, but consider purchasing a wok: Carbon steel and cast-iron take on high heat well, and the concave shape makes stir-frying foods easy and fast.

Provided by Food Network Kitchen

Time 10m

Yield 4 servings

Number Of Ingredients 11

1 large bunch broccoli (about1 1/2 pounds)
2 tablespoons soy sauce
1 tablespoon cornstarch
1 teaspoon sugar
2 tablespoons plus 1 teaspoon vegetable or peanut oil
1 scallion, chopped
2 to 3 cloves garlic, chopped (about 2 teaspoons)
1-inch piece ginger, peeled and chopped (about 2 teaspoons)
Pinch to 1/4 teaspoon crushed red pepper flakes
1/4 teaspoon toasted sesame oil
Cooked white or brown rice, for serving

Steps:

  • Trim the florets off the broccoli, and cut into 1- to 1 1/2-inch pieces. Peel the broccoli stalks with a vegetable peeler to remove the tough outer skin, and slice 1/4 inch thick on the diagonal. Set aside.
  • Whisk together 1/2 cup water, soy sauce, cornstarch and sugar in a small bowl. Set aside.
  • Heat a large wok over high heat. Add 2 tablespoons of the vegetable oil, and swirl to coat the wok. Once the oil begins to smoke, add the broccoli florets and stems. Cook, stirring constantly, until browned around the edges, about 2 minutes. Add 2 tablespoons of water to steam the broccoli, and cook, stirring constantly, until tender, about 2 minutes more. Push the broccoli to the edges of the pan, forming an empty well in the center. Add the remaining 1 teaspoon vegetable oil, then the scallions, garlic, ginger and pepper flakes, and stir until aromatic, 30 to 45 seconds. Add the soy mixture, and stir until the sauce has thickened and the broccoli is coated, about 30 seconds. Remove from the heat, add the sesame oil and stir to coat. Serve with rice.

1 Tbsp. vegetable oil
1 lb. boneless sirloin steak, cut into thin slices
1 bag (14 oz.) Birds Eye® Recipe Ready Broccoli Stir Fry
½ cup prepared stir-fry sauce

  • *Substitute 2 cups hot cooked rice
  • **Cook steak to an internal temperature of 145°F as measured with a food thermometer; let rest 3 minutes.

Tips:

  • Use high-quality beef: Opt for flank steak, ribeye, or sirloin steak for a tender and flavorful stir-fry.
  • Tenderize the beef: To ensure the beef is tender, slice it against the grain and marinate it in a mixture of soy sauce, cornstarch, and oil for at least 30 minutes.
  • Use fresh broccoli: Look for broccoli with tight florets and deep green color. Cut the broccoli into bite-sized pieces.
  • Prepare the sauce in advance: To save time, whisk together the sauce ingredients (soy sauce, oyster sauce, rice vinegar, sugar, cornstarch, and water) in a bowl before cooking.
  • Cook the beef in batches: To prevent overcrowding the pan and ensure even cooking, cook the beef in batches. Remove the beef from the pan and set aside before adding the vegetables.
  • Use a large skillet or wok: A large skillet or wok will allow you to easily toss the beef and vegetables and prevent overcrowding.
  • Cook over high heat: Stir-fries are cooked over high heat to quickly sear the beef and vegetables and preserve their鮮脆ness. Make sure your pan or wok is hot before adding the ingredients.
  • Toss the ingredients constantly: To ensure even cooking and prevent the ingredients from sticking to the pan, toss them constantly while stir-frying.
  • Serve immediately: Stir-fries are best served immediately after cooking. They can be enjoyed on their own or served over rice or noodles.
