Steps:
- Place the currants in a medium bowl and cover with boiling water. Let sit until soft and plump, about 5 minutes. Drain and set aside.
- Meanwhile, mix the vinegar, honey, 1/4 teaspoon salt and a few grinds of pepper in a large bowl. Drizzle in the olive oil, whisking constantly, until emulsified.
- Shred the broccoli florets and stems and red cabbage using the shredding disc of a food processor (see Cook's Note). Add to the bowl with the dressing and fold in the currants, almonds, onions, cilantro, parsley, 3/4 teaspoon salt and a few grinds of black pepper. Transfer to a serving bowl and garnish with more cilantro and parsley leaves, if desired.

Steps:
- 1. In a bowl, toss the broccoli, carrots, raisins, onions, cranberries.
- 2. In a small bowl whisk the dressing ingredients together.
- 3. Pour dressing over broccoli mixture and toss to coat well. If slaw is too dry for you, make another 1/2 recipe of dressing...
- 4. Refrigerate until ready to serve. You can leave out the almonds and stir them in right before serving, to maintain their crunch. If making for a party, I would double this recipe...it won't last long.

Tips:
- Choose the right broccoli: For the best results, use fresh, firm broccoli with tightly closed florets. Avoid broccoli that is wilted or has yellow or brown spots.
- Cut the broccoli into uniform pieces: This will help to ensure that the broccoli cooks evenly. If the pieces are too large, they will take longer to cook and may end up being overcooked on the outside and undercooked on the inside.
- Blanch the broccoli: Blanching is a quick process of boiling the broccoli for a short period of time and then immediately transferring it to an ice bath. This helps to preserve the broccoli's bright green color, crisp texture, and nutrients.
- Use a variety of vegetables: In addition to broccoli, you can add other vegetables to your slaw, such as shredded cabbage, carrots, red onion, or bell pepper. This will add color, flavor, and texture to the dish.
- Choose a dressing that you like: There are many different dressings that you can use for broccoli slaw. Some popular options include mayonnaise-based dressings, vinegar-based dressings, and yogurt-based dressings. Choose a dressing that you think will complement the flavors of the broccoli and other vegetables.
Conclusion:
Broccoli slaw is a healthy and refreshing side dish that is perfect for any occasion. It is easy to make and can be tailored to your own taste preferences. With a variety of vegetables, dressings, and toppings to choose from, there are endless possibilities for creating a delicious and nutritious broccoli slaw.
