Time 35m

Yield 12

Number Of Ingredients 7

2 cups canola oil for frying, or as needed
1 ½ cups cubed cooked turkey
½ cup turkey gravy
1 (12 ounce) package egg roll wrappers
1 ½ cups mashed cooked potatoes
1 ½ cups prepared stuffing
½ cup prepared whole-berry cranberry sauce

Steps:

  • Heat oil in a pan on the stovetop until it reaches 375 degrees F (190 degrees C).
  • Toss turkey and 1/2 cup gravy in a bowl until well combined.
  • Lay an egg roll wrapper on a plate or a clean cutting board with one of the corners pointing up, so it is positioned like a diamond. Pour some water into a small bowl next to the plate. Layer 2 tablespoons mashed potatoes, 2 tablespoons of the turkey-gravy mixture, 2 tablespoons stuffing, and 1/2 tablespoon of cranberry sauce in a vertical line in the center of the wrapper.
  • Dip your fingertips in the bowl of water and swipe some water around the edges of the egg roll wrapper. Fold the top and bottom corners of the egg roll wrapper over the filling. Next, fold in the left corner, then roll from left to right until the egg roll is completely wrapped. Wet your fingers with additional water and trace the parts of the egg roll wrapper that connect to each other and pinch lightly to seal. Repeat with the remaining wrappers and filling.
  • Fry egg rolls in batches in the hot oil, turning often, until golden brown and heated through, 3 to 4 minutes. Transfer to a paper towel-lined plate to drain and cool.

Time 5h

Yield 12 rolls

Number Of Ingredients 7

2 cups plus 2 tablespoons milk
7 tablespoons unsalted butter, plus more for the baking dish
3 tablespoons granulated sugar
One 1/4-ounce package active dry yeast
5 cups unbleached all-purpose flour
1 tablespoon fine salt
Vegetable oil, as needed

Steps:

  • In a small saucepan, combine the milk, 3 tablespoons butter, and sugar. Place over medium-high heat and cook, stirring, until the butter has melted. Remove from the heat and cool to about 110 degrees F. Scatter the yeast over the surface of the liquid and set aside until foamy, about 10 minutes.
  • Meanwhile, in large bowl, whisk together the flour and salt and set aside.
  • Pour the milk and yeast mixture into the bowl of flour and mix until a soft, ragged mixture is formed. Transfer the flour mixture to a well-floured work surface and knead by hand until a soft, elastic dough is formed, about 10 minutes. Transfer the dough to a lightly oiled bowl, cover with a kitchen towel and place in a warm spot, until puffed and doubled in size, about 2 hours.
  • Place a rack in the center of the oven and preheat to 400 degrees F. Transfer the dough to the work surface and, using your hands, gently flatten into a disc. Divide the dough into 12 equal pieces. Using your hands, round each dough piece into a ball.
  • Butter a buttered 9 by 13 by 2-inch baking dish. Place the balls of dough, seam side-down, in 3 rows of 4 each. Cover with a kitchen towel and place in a warm spot until they've risen almost to the top of the baking dish, about 2 to 2 1/2 hours.
  • Melt the remaining 4 tablespoons butter and liberally brush the rolls with it. Bake until golden brown, about 25 minutes.
  • Remove the rolls from the oven and let cool slightly. Transfer the rolls to a cooling rack to cool completely before serving.

Tips:

  • Use fresh ingredients: High-quality ingredients make a big difference in the flavor of your rolls. Choose fresh eggs, milk, and butter, and use a good quality flour.
  • Activate the yeast properly: To ensure your rolls rise properly, activate the yeast according to the package directions. This usually involves dissolving the yeast in warm water with a little sugar. Let it sit for a few minutes until it becomes foamy.
  • Knead the dough properly: Kneading the dough develops the gluten, which gives the rolls their structure and elasticity. Knead the dough for at least 5 minutes, or until it is smooth and elastic.
  • Let the dough rise in a warm place: The dough needs to rise in a warm place in order to double in size. This usually takes about 1 hour. You can place the dough in a warm oven or in a sunny spot.
  • Shape the rolls: Once the dough has risen, divide it into equal pieces and shape them into rolls. You can shape them into any shape you like, such as round, crescent, or cloverleaf.
  • Bake the rolls: Bake the rolls in a preheated oven until they are golden brown. This usually takes about 20 minutes.

Conclusion:

Thanksgiving rolls are a delicious and versatile side dish that can be enjoyed with a variety of meals. They are easy to make and can be customized to your liking. With a little planning and effort, you can create a batch of Thanksgiving rolls that will impress your family and friends.
