CRISPY-EDGED QUESADILLA

Crispy-Edged Quesadilla image

This straightforward quesadilla has an unexpected twist: a border of salty, crispy cheese surrounding the tortilla. Achieving it couldn't be easier; just press down on the folded tortilla as it heats up in the pan so the cheese spills out and turns golden. A nonstick pan is key here, otherwise the melted cheese will glue itself onto the cooking surface. Medium heat is just the right temperature for a quesadilla: It's hot enough to crisp up the cheese but low enough to prevent the cheese from burning.

Time 10m

Yield 1 quesadilla

Number Of Ingredients 3

2 teaspoons oil (such as olive, grapeseed or sunflower oil)
1 (8-inch) flour tortilla
2/3 cup shredded cheese (such as Cheddar, Monterey Jack or Mexican cheese blend)

Steps:

  • Place a medium nonstick skillet over medium heat, then add the oil. Let oil heat up for 20 seconds, swirling the pan around so the oil coats the bottom.
  • Place the tortilla in the skillet and sprinkle the cheese evenly over the top. Once the cheese begins to melt, 30 seconds to 1 minute, use a spatula to fold the tortilla in half. Using the spatula, press down firmly on the top of the tortilla until some of the cheese runs out into the pan. Let the quesadilla cook until the cheese that's leaked out solidifies and turns brown, 2 to 3 minutes.
  • Flip the quesadilla over and let cook on the other side for another 1 to 2 minutes, until the cheese is crisp and golden. Slide quesadilla onto a plate and serve immediately.

Made this to use up the thanksgiving leftovers. Can be varied easily, depending on what you have left over. I served this with cranberry sauce as garnish.

Time 6m

Yield 4 serving(s)

1 cup prepared stuffing
1 cup turkey, shredded
gravy
cranberry sauce

  • Lay one tortilla down and spread about 1/4 to 1/2 cup of cheese on whole tortilla.
  • On one half, scatter about 1/4 to 1/3 cup of shredded turkey (more or less according to your preference--just don't use too much or your quesadilla will be really stuffed!).
  • Sprinkle about 1/4 or less cup of stuffing over the turkey.
  • Drizzle gravy over the turkey and stuffing.
  • Fold the tortilla in half once the cheese starts to melt.

Tips:

  • Use high-quality ingredients: Fresh, flavorful ingredients will make your quesadillas taste their best. Look for ripe vegetables, tender chicken or turkey, and a good quality cheese.
  • Don't overcrowd the quesadillas: If you put too much filling in your quesadillas, they will be difficult to fold and cook evenly. Add just enough filling so that the quesadillas are full, but not overflowing.
  • Cook the quesadillas over medium heat: This will help to prevent the tortillas from burning and will allow the filling to cook through evenly.
  • Flip the quesadillas frequently: This will help to ensure that they cook evenly on both sides.
  • Serve the quesadillas immediately: Quesadillas are best enjoyed hot and fresh out of the pan. Serve them with your favorite toppings, such as guacamole, salsa, or sour cream.

Conclusion:

Thanksgiving quesadillas are a delicious and easy way to use up leftover turkey or chicken. They are also a great way to get your kids to eat their vegetables. With a few simple ingredients and a little bit of time, you can make a delicious and satisfying meal that the whole family will love. So next time you have some leftover turkey or chicken, don't just make a sandwich. Try making Thanksgiving quesadillas instead!
