Categories     Muffins

Time 1h30m

Number Of Ingredients 10

8 c cornbread stuffing
2 Tbsp olive oil
1 stick butter, softened
4 celery heart ribs
1 white onion
3 fuji apples
2 Tbsp poultry seasoning
1/4 c chopped parsley
3 c chicken stock
salt and peper

Steps:

  • 1. Preheat oven to 375 degrees F.
  • 2. Over medium high heat olive oil and 4 tablespoons butter. Add bay leaf, vegetables and apples. Add salt, pepper and poultry seasoning.
  • 3. As the veggies start to soften add stuffing and stock mixing well.
  • 4. Spray large muffin tray with olive oil non stick spray. Over fill each muffin and shape with a large spoon. Bake 10 to 15 minutes so that the muffins are set. Serve hot.

Tips:

  • Muffin Pan Preparation: Before starting, ensure your muffin pan is properly greased or lined with paper liners to prevent muffins from sticking.
  • Ingredient Measurements: Use measuring cups and spoons to accurately measure ingredients for consistent results. Don't eyeball it!
  • Muffin Batter Consistency: Aim for a batter that is thick enough to coat the back of a spoon but not too runny. If it's too thin, add more flour a tablespoon at a time until you reach the desired consistency.
  • Mixing Technique: Avoid overmixing the batter. Overmixing can result in tough muffins. Gently fold the dry ingredients into the wet ingredients until just combined. Lumps are okay!
  • Muffin Filling Distribution: Evenly distribute the cranberry sauce, nuts, or other fillings throughout the batter before pouring it into the muffin cups. This ensures a well-balanced distribution of flavors in each muffin.
  • Muffin Baking Time: Keep an eye on the muffins while they bake. The exact baking time may vary depending on your oven, so it's best to check for doneness a few minutes before the recommended time.
  • Muffin Cooling: Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack to cool completely. This helps them maintain their shape and texture.

Conclusion:

With these Thanksgiving muffin recipes, you can add a touch of autumn flavors and festive cheer to your holiday gatherings. Whether you prefer classic pumpkin spice muffins, tangy cranberry muffins, or nutty streusel muffins, there's a recipe here to suit every taste. Remember to follow the tips mentioned above for perfect muffins every time. Bake with love, and enjoy these delicious treats with your family and friends. Happy Thanksgiving!
