2 c leftover veggies, corn, green beans, broccoli, whatever you have on hand
3 c chopped turkey, or chicken
1 can(s) cream of chicken, celery, or mushroom soup
1/2 c sour cream
2 c leftover stuffing, or ( 6 ounce) stuffing mix of your choice
1 1/2 c shredded cheese, your choice..i used swiss and cheddar

Steps:

  • 1. Preheat oven to 350 degree
  • 2. Spread your turkey or chicken into an ungreased 13×9 baking dish. Cover with the vegetables. Stir together soup, sour cream and all but a 1/2 cup of cheese, and spread mixture over the vegetables. If using leftover stuffing add this as the next layer in your casserole. If using a stuffing mix, stir together the mix and 3/4 hot water and sprinkle this over top of the soup/cream cheese/ cheese mixture. Spread the remaining cheese evenly to the top of casserole and bake for 40 - 45 minutes or until nice and bubbly.

Tips:

  • Choose the right leftovers: Not all Thanksgiving leftovers are created equal. Some, like turkey and mashed potatoes, hold up well in a casserole. Others, like green bean casserole and cranberry sauce, are better served as they are.
  • Don't be afraid to mix and match: There are no hard and fast rules when it comes to Thanksgiving leftover casseroles. Feel free to mix and match your favorite ingredients to create a dish that's unique and delicious.
  • Use up your leftovers quickly: Thanksgiving leftovers are best enjoyed within 3-4 days. After that, they start to lose their flavor and texture.
  • Make ahead and freeze: Thanksgiving leftover casseroles are a great make-ahead meal. Simply assemble the casserole and freeze it for up to 3 months. When you're ready to serve, thaw the casserole overnight in the refrigerator and then bake it according to the recipe instructions.
  • Garnish with fresh herbs: Just before serving, garnish your Thanksgiving leftover casserole with fresh herbs like parsley, thyme, or rosemary. This will add a pop of color and flavor to the dish.

Conclusion:

Thanksgiving leftover casseroles are a delicious and easy way to use up your holiday leftovers. With a little creativity, you can create a dish that's both satisfying and delicious. So next time you're looking for a way to use up your Thanksgiving leftovers, give one of these casseroles a try. You won't be disappointed.
