This is a must usually when I visit Thailand, and I could eat this everyday when I am there. Finally managed to find a authentic recipe for this dish from www.10thaidish.athailand.com and i am sharing it. :)

3 tablespoons peanut oil or 3 tablespoons corn oil
7 ounces boneless skinless chicken breasts, cut lengthways into 1/2 inch or 1cm thick slices
1 tablespoon chopped garlic
1 medium onion, sliced
2 eggs
4 cups cooked rice
1 tomatoes, cut into 8 wedges
1/2 cup basil, minced
1 spring onion, chopped
2 teaspoons white soy sauce
1 teaspoon fish sauce
1 teaspoon sugar
1 teaspoon white pepper

Steps:

  • Heat the oil in a Chinese pan, add garlic. When it is fragrant and slightly brown, add the chicken.
  • Mix well over the heat for 1 minute.
  • Add the onion and cook for 1 minute.
  • Break in the eggs and stir mix very well.
  • Then stir in the rice and the rest of the ingredients. Stir well.
  • Cook for 2 minutes and serve immediately with cucumber slices and whole spring onions.
  • A twist of lime would make it even better.

Here's a meatless recipe that doesn't suffer from the lack of it. It's nice and spicy for those who like a "kick" to their palates. For extra kick you can add 1 tablespoon of Asian hot chili oil reducing the Canola oil by that much. Chefs Note: Be sure the cooked rice is COLD to the touch or else the dish will come out soggy.

6 cups cooked jasmine rice, cold to the touch
1 cup peas, frozen and thawed
2 garlic cloves, chopped
1/2 red pepper, chopped
4 tablespoons canola oil
2 teaspoons fresh ginger, minced
2 large eggs, lightly beaten
1 medium tomatoes, fresh, rough chopped
2 tablespoons hot chili paste
2 tablespoons light soy sauce
1 tablespoon fresh lime juice
scallion, chopped for garnish

Steps:

  • Heat oil in a large skillet or wok.
  • Add ginger and garlic and stir fry for 1-2 minutes.
  • Remove with a slotted spoon and set aside.
  • In the same pan add peas and red pepper.
  • Stir fry for 2 minutes until slightly softened.
  • Remove and set aside.
  • Add the cold rice to the skillet and heat thoroughly.
  • With a spoon make a hole in the center of the rice pushing the rice to the sides.
  • Add the beaten eggs into the center without touching the rice.
  • Stir the eggs until pretty well set then start incorporating the rice into them.
  • Add the chopped tomatoes.
  • Return the reserved ginger, garlic, peas and red pepper to the pan.
  • Mix in the chili paste, soy sauce and lime juice.
  • Serve with chopped scallions as a garnish.

Tips:

  • Use day-old rice: Day-old rice is less sticky and easier to stir-fry. If you don't have day-old rice, spread freshly cooked rice on a baking sheet and let it cool completely before using.
  • Use a well-seasoned wok or large skillet: A well-seasoned wok or large skillet will help prevent the rice from sticking. If you don't have a wok or large skillet, you can use a regular skillet, but be sure to use a little more oil.
  • Stir-fry the rice over high heat: High heat will help create a nice smoky flavor in the rice. Be sure to stir the rice constantly so that it doesn't burn.
  • Add the vegetables last: The vegetables will cook quickly, so add them last so that they don't overcook.
