  • In a small measuring cup, combine the first 7 ingredients and stir well. Set aside. In a large skillet or sautee pan, heat oil over med-high heat. Add chili, garlic and ginger to pan and cook for approximately 30 seconds. Add in gound meat, breaking it up with a spoon until it is crumbly, completely cooked through and well browned. Add in carots and onions and toss to combine. Pour sauce into the skillet around the outside of the ground meat mixture. Gently stir to combine. As sauce boils and reduces, it will glaze the meat mixture. Continue to cook until almost all the liquid has either evaporated or been absorbed and the meat mixture is glossy. This is my latest concoction in my mission to bring healthier food to my household. Over the past few weeks I have been using Fridays to try out different versions of healthier burgers. Tonight we had these Thai inspired turkey burgers. They had a fresh taste and I think it is important to use the fresh versions of the ingredients rather than dried spices to get that taste. I had mine on a bun with some crisp lettuce and some fat free mayo and ketchup. I bet they would be really nice with some sweet chili sauce in place of the ketchup and mayo though. These could easily be made up and frozen raw to have ready when short of time. Cooking time includes chilling time.

1 1/2 tablespoons fresh lemongrass, chopped up
2 garlic cloves
1 tablespoon fresh ginger, chopped
1/3 cup green onion, roughly chopped
1/2 cup fresh cilantro, roughly chopped

1 lime, zest of, only
2 tablespoons water
1 lb lean ground turkey
1 egg white

Steps:

  • Put the lemongrass, garlic, ginger, green onions, cilantro, chili flakes and lime zest into a food processor or chopper along with the water and blitz them until they are finely chopped and combined.
  • Add the mixture to the turkey and also put in the egg white.
  • Mix the turkey and the other ingredients together by hand until they are well combined.
  • Put into the fridge to chill for about 30 minutes for them to firm up a bit.
  • Take out of the fridge and shape into four equal sized burger patties.
  • Then either fry them off in a pan as you would normally do or do as I do and brush them very lightly with a bit of extra virgin olive oil and cook them on a Foreman type grill. It takes about 8 minutes or so for them to be fully cooked.
  • Serve.

2 tablespoons peanut oil
1 onion, finely chopped
3 garlic cloves, crushed
2 long green chilies, seeds removed, finely chopped
2 teaspoons grated fresh ginger
1 tablespoon brown sugar
1 red capsicum, cut into 1cm cubes
200 g thin green beans, cut into 2cm lengths
4 kaffir lime leaves, thinly sliced (see notes)
4 cups cooked cooled jasmine rice (1 1/3 cups (265g, uncooked)
3 cups roughly chopped cooked turkey
2 tablespoons fish sauce
2 tablespoons gluten-free tamari (see notes)
1/2 cup Thai basil (see notes or use regular basil)
lime wedge, to serve

Steps:

  • Heat the oil in a wok over medium-high heat. Stir-fry the onion for 2-3 minutes until softened. Add the garlic, chilli, ginger and sugar, then cook for a further 1 minute until the mixture is fragrant and the sugar has dissolved. Add the chopped capsicum, beans and kaffir lime leaves, then stir-fry for 1-2 minutes until the vegetables are just tender. Add the cooked rice, chopped turkey, fish sauce and tamari, then stir-fry for 2-3 minutes until heated through. Stir in the basil, then serve the rice in bowls with lime wedges to squeeze.

1/3 cup water
2 tablespoons asian fish sauce
2 tablespoons brown sugar
1/2 cup diced cucumber
1/2 cup cilantro leaf
2 tablespoons lime juice
chopped peanuts (to garnish)

Steps:

  • Brown ground turkey in a nonstick pan. Add water, fish sauce and brown sugar and cook, stirring until liquid has almost evaporated. Toss with cucumber, cilantro, lime juice and peanuts. Serve with lettuce leaves for wrapping.

1/4 cup quinoa
1/2 cup water
1 tsp canola or olive oil
1 small sweet onion, chopped
1 clove garlic, minced
1 20 oz pkg ground turkey
1 egg
2 tbsp Worcestershire
1 tbsp red Thai paste or tomato paste
1 tbsp Sriracha chili sauce
1 tsp salt
1/2 tsp ground pepper
Glaze
2 tbsp brown sugar
2 tsp Worcestershire
1 tsp water

Steps:

  • Bring quinoa & water to boil. Cover and let sit 15-20 mins on low until water is evaporated. Cool. Heat oil on medium and sauté onions for 5 mins. Add garlic & sauté 1 min. Add to quinoa to cool together. Preheat over to 350. Mix turkey, egg, paste, chili sauce, salt & pepper and Worcestershire. Add in cooled quinoa mix. Place foil on baking sheet and form a loaf on top of foil. Make the glaze with Worcestershire, brown sugar & water. Pour & spread on to loaf. Bake 50-60 minutes until temp is 160. Serve with salad, potatoes or other veggies. To make as meatballs, increase oven to 425, roll into balls, place on cookie sheet, brush on sauce and bake for 18-22 minutes.

DRESSING

1/2 c all natural peanut butter

1/4 c rice vinegar
1/4 c sesame oil
2 Tbsp ginger root, grated
2 clove garlic, peeled
1/4 tsp red pepper flakes
