1/2 lb. firm tofu, cut into small cubes
1/4 lb. ground pork, minced
2 tbsp. peanuts
1 1/2 tbsp. lime juice
2 tbsp. fish sauce
1 tbsp. sugar
1/2 cucumber, thinly sliced
1/2 tomato, thinly sliced
1/2 stalk celery, julienned
1/2-1 tsp. chili powder
1 1/2 tsp. coconut milk

Steps:

  • Fry shallots in hot vegetable oil until browned and crispy. Set aside. Fry tofu in hot vegetable oil until browned. Set aside. Blanch pork in boiling water until cooked through, 2-3 minutes. Set aside. Toast peanuts in oven or dry saute pan. Grind in food processor or spice grinder until finely ground. Set aside. Combine lime juice, fish sauce, and sugar. Adjust amounts to taste. 1 ½ teaspoons olive oil

3 tablespoons flaked coconut
