Categories     Thai

Time 17m

Yield 4-6 serving(s)

Number Of Ingredients 10

500 g white fish fillets, finely diced
2 tablespoons red curry paste
2 tablespoons fish sauce
1 tablespoon cornflour (cornstarch)
1 egg
1/2 cup green beans, finely chopped
1/4 cup green onion, finely chopped
vegetable oil, for deep-frying
1/2 cup sweet chili sauce
1/2 cup spicy cucumber relish

Steps:

  • In a food processor, mince fish to a paste.
  • Add curry paste, fish sauce, cornflour and egg. Combine well.
  • Transfer to a bowl and mix in beans and onions.
  • Wet hands and shape mix into flat round cakes approximately 5cm in diameter and 1cm thick.
  • Deep-fry in vegetable oil until golden brown, about 5-7 minutes.
  • Drain on paper towel.
  • Serve with sweet chili sauce and cucumber relish.

Tips:

  • Use ripe chilies: Ripened chilies are sweeter and have a more intense flavor than unripe ones. If you can't find ripe chilies, you can roast them in the oven at 400 degrees Fahrenheit for 10-15 minutes, or until they are slightly charred.
  • Remove the seeds and ribs from the chilies: The seeds and ribs of the chilies are the hottest parts, so if you want a milder sauce, you can remove them before cooking. However, if you like spicy food, you can leave them in.
  • Use fresh ingredients: Fresh ingredients will give your sauce the best flavor. If you can't find fresh ingredients, you can use frozen or canned ones, but the flavor will be less intense.
  • Adjust the sweetness and spiciness to your taste: This recipe is a good starting point, but you can adjust the sweetness and spiciness to your own taste. If you want a sweeter sauce, add more sugar or honey. If you want a spicier sauce, add more chilies.
  • Let the sauce cool completely before storing it: This will help the flavors to develop and mellow.

Conclusion:

Thai sweet chili sauce is a versatile condiment that can be used on a variety of dishes. It is sweet, spicy, and tangy, and it adds a delicious flavor to anything it is paired with. Whether you use it as a dipping sauce, a marinade, or a glaze, Thai sweet chili sauce is sure to please everyone at your table.
