1/2 onion, diced
3 garlic cloves, minced
1 tbsp. fresh ginger, minced
2 tbsp. low sodium soy sauce (or coconut aminos)
2 tsp. Asian garlic chili paste (like sambal oelek)
1/2 cup Thai basil (loosely chopped)
1 lime, juice only

Steps:

400g turkey breast or fillet, roughly chopped
1 lemongrass stalk, finely chopped
2 garlic cloves , crushed
zest and juice 1 lime
3 tbsp low-sodium soy sauce
small bunch coriander , chopped
1 red chilli , deseeded and chopped
2 nests medium wheat noodles
300g pack mixed peppers stir-fry vegetables
sweet chilli sauce , to serve (optional)

Steps:

  • Heat the grill to Medium. Put the turkey in a food processor and pulse until minced. Add the lemongrass, garlic and lime zest, and half the soy sauce, coriander and chilli, then pulse again until combined. Tip the mix into a bowl and add some black pepper. Shape into 8 patties, then transfer to a non-stick baking tray and grill for 3-4 mins each side, until cooked through.
  • Meanwhile, soak the noodles following pack instructions, then drain and add the vegetables, the remaining soy sauce and the lime juice. Toss well, divide between plates and sprinkle with the remaining coriander and chilli. Serve with the turkey patties and some sweet chilli sauce for dipping, if you like.

2 tablespoons extra-virgin olive oil

1/2 teaspoon ground cinnamon

3 tablespoons apple cider vinegar
1 onion, finely chopped, divided
2 cups low-sodium chicken broth

Steps:

  • Preheat oven to 375°F. Season squash with 1 tsp. salt. Arrange face down on a parchment-lined rimmed baking sheet. Bake squash until interior is tender when flipped and prodded with a fork, 20-40 minutes depending on size.

1 (700 ml) jar tomato sauce

13.5 oz can light coconut milk
1/2 tsp cumin, ground
1 tsp cardamom, ground
2 tsp coriander, ground & husks sifted out (may use less if coriander is fresh and/or pre-ground)
1 tsp fresh ginger paste
1/2 Tbsp fresh lemongrass paste
3/4 tsp salt
pepper, to taste
1 tsp garlic, minced
15.5 oz can great northern beans, rinsed & drained

  • In a Dutch oven or other large pot, heat oil over medium heat. Add carrots and onion and saute until softened. Add the ground turkey and cook until browned, breaking into bite-sized pieces.
