Tips:

  • Use the right rice. Day-old rice is best for fried rice, as it has less moisture and will not clump together. If you are using fresh rice, spread it out on a baking sheet and let it dry for 30 minutes before cooking.
  • Cook the rice properly. The rice should be cooked until it is just tender, but not mushy. If the rice is too soft, it will break up when you stir-fry it.
  • Use a large skillet or wok. You need a large cooking surface to stir-fry the rice properly. A 12-inch skillet or wok is ideal.
  • Heat the skillet or wok over high heat. The skillet or wok needs to be very hot before you add the rice. This will help to prevent the rice from sticking.
  • Add the rice to the skillet or wok in small batches. Do not overcrowd the skillet or wok, or the rice will not cook evenly.
  • Stir-fry the rice constantly. Use a spatula to stir-fry the rice constantly, until it is heated through and slightly browned.
  • Add the other ingredients. Once the rice is cooked, add the other ingredients to the skillet or wok. Cook until the ingredients are heated through.
  • Season to taste. Season the fried rice with salt, pepper, and other seasonings to taste.
  • Serve immediately. Fried rice is best served immediately, while it is still hot and fresh.
