THAI PINEAPPLE CHICKEN CURRY

Thai Pineapple Chicken Curry image

This is a quick, easy, and authentic Thai curry dish that's sweet and very spicy. I became addicted to the dish at a local restaurant and then worked to duplicate it at home. I think I've got the taste and presentation pegged. I'm guesstimating on the amounts since I don't measure much when I cook. Feel free to adjust to taste.

Tips:

  • Use fresh pineapple for the best flavor. If using canned pineapple, be sure to drain it well and rinse it before using.
  • To make the curry paste from scratch, you will need a mortar and pestle. If you don't have one, you can use a food processor or blender, but the texture will not be as smooth.
  • If you don't have green curry paste, you can use red curry paste instead. Just be aware that red curry paste is spicier than green curry paste.
  • To make the curry richer, use coconut cream instead of coconut milk. Coconut cream is thicker and has a higher fat content, which will give the curry a creamier texture.
  • Serve the curry with jasmine rice or roti bread.

Conclusion:

This Thai pineapple chicken curry is a delicious and easy-to-make dish that is perfect for a weeknight meal. The curry is flavorful and creamy, and the pineapple adds a touch of sweetness and acidity. Serve it with jasmine rice or roti bread for a complete meal.
