1 egg, beaten
2 tablespoons soy sauce
⅓ cup minced fresh cilantro
2 green onions, thinly sliced
1 ½ tablespoons minced fresh ginger, or more to taste
2 cloves garlic, minced
1 pinch salt and ground black pepper to taste
1 pound lean ground turkey
⅓ cup bread crumbs

Steps:

  • Whisk egg and soy sauce together in a bowl; add cilantro, green onions, ginger, garlic, salt, and pepper. Mix turkey and bread crumbs into mixture and mix well; form into 4 patties.
  • Heat a large non-stick skillet over medium heat. Place patties in the hot skillet; cover skillet and cook, turning once, until burgers are no longer pink in the center, about 15 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

SPICY PEANUT SLAW:
1 tablespoon rice vinegar
1 tablespoon Thai chili sauce
1 tablespoon peanut butter
1 tablespoon Thai red chili paste
1 cup shredded cabbage
1 small carrot, shredded
1 radish, finely chopped
1 green onion, finely chopped
3 tablespoons dry roasted peanuts, chopped
1-1/2 teaspoons minced fresh mint or 1/2 teaspoon dried mint
BURGERS:
1 small onion, finely chopped
2 tablespoons minced fresh cilantro
2 garlic cloves, minced
2 to 3 teaspoons Thai red chili paste
1 pound ground turkey
4 hamburger buns, split and toasted

Steps:

  • In a small bowl, combine the vinegar, chili sauce, peanut butter and chili paste. Add the remaining slaw ingredients; toss to coat. Set aside., In a large bowl, combine the onion, cilantro, garlic and chili paste. Crumble turkey over mixture and mix well. Shape into four patties., Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill burgers, covered, over medium heat or broil 4 in. from the heat for 5-7 minutes on each side or until a thermometer reads 165° and juices run clear. Serve on buns with slaw.

This is my latest concoction in my mission to bring healthier food to my household. Over the past few weeks I have been using Fridays to try out different versions of healthier burgers. Tonight we had these Thai inspired turkey burgers. They had a fresh taste and I think it is important to use the fresh versions of the ingredients rather than dried spices to get that taste. I had mine on a bun with some crisp lettuce and some fat free mayo and ketchup. I bet they would be really nice with some sweet chili sauce in place of the ketchup and mayo though. These could easily be made up and frozen raw to have ready when short of time. Cooking time includes chilling time.

1 1/2 tablespoons fresh lemongrass, chopped up
2 garlic cloves
1 tablespoon fresh ginger, chopped
1/3 cup green onion, roughly chopped
1/2 cup fresh cilantro, roughly chopped
1/2 teaspoon red chili pepper flakes
1 lime, zest of, only
2 tablespoons water
1 lb lean ground turkey
1 egg white

Steps:

  • Put the lemongrass, garlic, ginger, green onions, cilantro, chili flakes and lime zest into a food processor or chopper along with the water and blitz them until they are finely chopped and combined.
  • Add the mixture to the turkey and also put in the egg white.
  • Mix the turkey and the other ingredients together by hand until they are well combined.
  • Put into the fridge to chill for about 30 minutes for them to firm up a bit.
  • Take out of the fridge and shape into four equal sized burger patties.
  • Then either fry them off in a pan as you would normally do or do as I do and brush them very lightly with a bit of extra virgin olive oil and cook them on a Foreman type grill. It takes about 8 minutes or so for them to be fully cooked.
  • Serve.

Love these. Very high in protein, low in fat. This was originally a hamburger recipe but I changed it a bit to work for turkey breast. The onions make these burgers awesome so be sure and include them. These arn't really for grilling more for baking because they don't hold together well. Does work alright if they are frozen first.

2 1/2 lbs lean turkey breast
2 large onions
1 (1 ounce) package ranch dressing mix
1 tablespoon pepper
2 tablespoons butter
4 egg whites

Steps:

  • Slice up onions and satuee them in butter until dark and carmalized.
  • Set aside and allow to cool for 3 minutes.
  • While onions are cooler remove turkey from wrapping and put in a large bowl.
  • Add either 2 whole eggs or 4 egg whites. Add ranch powder. Add Pepper.
  • Mix and then add in onions when cool and mix again.
  • Will be gooey, cook on foil then freeze or freeze them raw and cook later.
  • I cook these on foil at 425 in the oven until brown. Maybe 10 minutes or so max in a convection oven.

VEAL OR TURKEY BURGERS W/ONION GRAVY (LOW FAT!)

This is an old Weight Watcher's recipe my mom has been making since the late 70's. We both still make it to this day. The recipe contains no added fat, but you would never know it. Goes great served over rice or egg noodles.

2 lbs veal or 2 lbs turkey, minced
salt and pepper
2 cups water
1 -2 beef bouillon cubes or 1 -2 chicken stock cube
1 large onion, chopped
1 cup mushroom, sliced
1 tablespoon cornstarch (cornflour)
1/4 cup cold water

Steps:

  • Season the meat with salt and pepper to taste. Weigh out 4 oz/125 gm of meat and shape into a pattie. Do this with the remaining meat. Place patties on a platter, cover with plastic wrap/cling film and set aside.
  • Pour water into a large fry pan/skillet over medium high heat. Add stock cubes (use beef cubes for veal, chicken cubes for turkey), onions and mushrooms. Bring to a boil and then lower heat to simmer. Cook until onions are just about cooked. You may need to add more water as the veggies cook as you want to have about 2 cups worth of gravy at the end.
  • Gently place the burgers in the pan with the veggies and poach for about 5-7 minutes on each side, pressing down with a spatula to flatten a bit. Cook until juices run clear. Remove the cooked burgers to a plate and keep warm. Return sauce to a boil and add more water if necessary.
  • Put cold water into a small cup or bowl and stir in cornstarch with a fork or whisk. Slowly pour into the sauce in the pan and thicken.
  • Place rice or noodles on plate, place two burgers on top, and pour gravy over burgers.

Steps:

  • Combine all relish ingredients and refrigerate until ready to use.
  • Combine all Thai mayo ingredients and whisk. (There will be extra. If you only want enough for the burgers, cut recipe in half). Refrigerate for at least 1 hour.
  • Combine all burger ingredients in a large bowl and form into 4 patties, being careful not to overwork meat. Grill until cooked thoroughly, about 4 minutes per side. Once cooked, remove and set aside.
  • Place buns on grill cut side down and toast until lightly browned, being careful not to burn.
  • Spread mayo on top part of bun. Place burgers on bottom part of bun and top the burger with relish and a handful of bean sprouts.

500g turkey mince
85g fresh breadcrumb
3 tbsp red Thai curry paste (2 tbsp if you are using an authentic hot Thai brand
½ bunch spring onion finely chopped
1 egg , beaten
1 tbsp sunflower oil
mango pickle mayo
Spicy mango salsa
4 ciabatta rolls, split
handful Baby Gem lettuce leaves
½ cucumber , peeled and sliced
4 ripe tomatoes , sliced

Steps:

  • Place mince, breadcrumbs, curry paste, spring onions and egg into a large bowl. Season lightly, then mix well with your hands to combine. Divide into 4 and shape into burgers. Chill for 20 mins.
  • Meanwhile, make the salsa and mayo. Brush the burgers with oil and grill for 7 mins each side, or until firm, golden and cooked through. Alternatively, cook on the barbecue.
  • Once cooked, toast the rolls, cut-side up, under the grill. To serve, top the rolls with a turkey burger, add lettuce, cucumber, tomato slices and a spoonful of mayo or salsa and put the lids on.
