LAAB - THAI GROUND BEEF SALAD

Laab - Thai Ground Beef Salad image

Wonderful fast summer or anytime meal that comes together quickly once you have your ingredients prepped. Mise en place very helpful with this dish. From Taste of Thai - thank you! Use a nice butter lettuce for this - core the head & rinse the leaves well. Dry & have plenty available - use 2 heads if they seem small - 1 per serving! I entered 12 leaves simply because the program required a number - we just keep a couple of heads available when we make this.

Yield 2 serving(s)

Number Of Ingredients 13

2 tablespoons jasmine rice (uncooked)
1 lb ground beef (ground pork may be substituted)
4 tablespoons lime juice, divided (about 3-4 limes)
1 tablespoon fish sauce
1/2 cup shallot, thinly sliced
2 teaspoons gingerroot, minced fresh
4 scallions, chopped
1/4 cup mint leaf, chopped, plus whole leaves
fresh cilantro, for garnish
2 tablespoons cilantro, chopped
2 tablespoons chili-garlic sauce
2 teaspoons light brown sugar
12 lettuce leaves

Steps:

  • Toast rice in a dry skillet (no oil) over medium-high heat. Cook rice, shaking pan frequently until rice turns golden, about 8 minutes.
  • While rice is toasting, combine beef, 3 tablespoons of the lime juice, Fish Sauce, shallots and ginger in a bowl.
  • When rice is golden, pour on plate to cool. In same skillet over high heat, add beef mixture. Cook, breaking meat into small pieces, about 5-7 minutes or until cooked through. Remove from heat.
  • Add remaining tablespoon of lime juice, scallions, mint, cilantro, Garlic Chili Pepper Sauce and sugar to meat. Mix well.
  • Add cooled rice to spice grinder or blender, and grind into a sandy powder. Add to meat mixture and mix well.
  • Spoon laab into a serving bowl lined with lettuce leaves, or serve on individual leaves for a pretty presentation. Garnish with whole mint leaves.

THAI BASIL GROUND BEEF RECIPE - (4.3/5)

Thai Basil Ground Beef Recipe - (4.3/5) image

Provided by polledl

Number Of Ingredients 9

2 lbs of Grass-fed ground beef
3 tbsp coconut oil
2 1/2 bell peppers (we like a green and some red or orange for color)
1 pinch sea salt (be conservative and add it last)
3 - 4 Thai chili or Serano peppers (depends how spicy you like it; we eat Thai spicy, Joe knows )
1 large yellow onion, sliced
4 big stalks of fresh Thai basil, regular works too
5 tbsp Thai fish sauce
1 tsp Coconut Crystals

Steps:

  • Use a large 3 quart pan or wok and brown onions until golden in coconut oil, add chopped chili peppers (seeds in) and sliced bell peppers. Use medium - high heat. Continue to cook until it's all glossy and gorgeous, then add ground beef and stir in well. If you like bigger chunks you will not need to stir so much. Now add fish sauce and coconut crystals, stir well and add basil when the beef is no longer pink. We just rip the basil and toss it in. Let is simmer on ultra-low for 10 minutes and serve with some Cauliflower rice. Truly amazing and the whole thing will take you less than 30 minutes to prepare and cook! Enjoy and let us know what you think. J & H

Tips:

  • Use high-quality ground beef. Look for ground beef that is at least 80% lean. This will help ensure that the dish is flavorful and juicy.
  • Don't overcook the beef. Ground beef should be cooked until it is no longer pink in the center, but it should not be overcooked, or it will become tough.
  • Use a variety of vegetables. This will add flavor, texture, and nutrients to the dish. Some good options include bell peppers, onions, carrots, and celery.
  • Use a flavorful sauce. The sauce is what really brings the dish together. Be sure to use a sauce that is flavorful and that complements the other ingredients.
  • Serve over rice or noodles. This is the traditional way to serve Thai ground beef. However, you can also serve it over mashed potatoes, or even just on its own.

Conclusion:

Thai ground beef is a delicious and easy-to-make dish that is perfect for a weeknight meal. It is also a great way to use up leftover ground beef. With its bold flavors and variety of textures, this dish is sure to please everyone at the table. So next time you're looking for a quick and easy meal, give Thai ground beef a try.
