1(13.5-ounce) can light coconut milk
1 tablespoon Thai curry paste
2 tablespoons curry powder
2 teaspoons minced fresh ginger
3 cloves garlic, minced
Dash cayenne pepper
Kosher salt and freshly ground black pepper
8 ounces high-fiber whole wheat linguine, (recommended: DeCecco)
Olive oil cooking spray
1 vidalia onion, chopped
1 pound boneless skinless chicken breast, fat removed, cut into small pieces
Kosher salt and freshly ground black pepper
2 tablespoons curry powder
2 tablespoons peanut butter
1 cup thinly sliced roasted red peppers
1 cup thinly sliced water chestnuts
1 cup scallions, white and green parts, thinly sliced
Chopped fresh mint and cilantro leaves, for garnish
Lime wedges, for serving

Steps:

  • For the sauce: In a medium bowl, combine all of the sauce ingredients, whisk until thoroughly combined and set aside.
  • For the chicken: Cook the whole wheat linguine al dente according to box directions. Drain and rinse under cold water and spray lightly with olive oil cooking spray so it does not stick and set aside.
  • Coat a large nonstick skillet with cooking spray and add onions. Cook until translucent and beginning to brown, about 5 to 10 minutes. Add the chicken, season with salt and pepper and stir in curry powder. Saute chicken until lightly brown. Add the peanut butter and allow it to melt to coat the chicken.
  • Add the roasted red peppers, water chestnuts and scallions and season with salt and pepper as you like. Saute for a few minutes just to release flavor.
  • Pour the coconut curry sauce over the chicken and vegetables and stir gently. Cook just until warmed through and thickened a bit, about 3 to 5 minutes. Season with salt and pepper, as needed. Garnish with chopped mint and cilantro. Serve with lime wedges, if desired.
  • SUZY'S SERVING OPTIONS: (Serves four or more ? can be doubled easily)
  • Family Style ? Put linguine in a large deep platter or decorative bowl and pour mixture over the top. Toss gently with tongs. Garnish with fresh lime juice, and chopped scallions or herbs.
  • Low Carb Diets ? On a large dinner plate place Boston lettuce leaves in a fan covering the entire plate. Place 1/4 of the chicken mixture on top and drizzle with fresh lime juice and garnish with scallions. The sauce will form a natural salad dressing for the lettuce.
  • Individual Plates: Each serving is 2 oz. dry pasta and 1/4 of the chicken mixture. Garnish it with fresh lime juice, a lime wedge and scallions or herbs. Serve it on a small exotic plate for added presentation.

1 tablespoon curry powder
1 large onion, chopped into 1-inch pieces

Steps:

  • ~Rinse chicken and pat dry. Place in a storage bag and toss with the curry powder and ½ teaspoon salt. Refrigerate for 30 minutes.
  • ~In a 12-inch skillet, heat 1 teaspoon oil at medium-high heat. Add half of chicken and cook 2-3 minutes or till chicken is no longer pink. Remove chicken and repeat with remaining chicken. Remove chicken.
  • ~Heat 1 teaspoon oil in the same skillet. Add onion and bell pepper, and jalapeno peppers. Cook for about 5 minutes. Add garlic, and ginger just until fragrant, about 30 seconds.
  • ~Stir cornstarch into coconut milk. Turn heat to low and slowly add milk. Cook and stir until thickened. Turn up the heat to medium if needed. Add chicken and basil just before serving. Sometimes I add more curry if needed. Serve over hot rice and garnish with fresh basil. Steamed cauliflower goes well with this dish.

1/4 cup chicken broth
2 tablespoons Thai red curry paste

1 lb boneless skinless chicken breasts, cut into bite-size chunks
1 tablespoon creamy peanut butter
1 cup sugar snap pea pods
1 red bell pepper, diced (1 cup)

The green curry paste is quite hot, so you may want to adjust the curry paste for heat. 1 teaspoon curry powder

1 lb boneless skinless chicken breast half, fat removed, cut into small pieces
1 tablespoon creamy peanut butter
1 red bell pepper, roasted and sliced
4 ounces sliced water chestnuts, drained
1/2 cup onion, chopped
1/2 cup chopped green onion (white part only)
cilantro, washed and chopped
1/2 lb fettuccine, look for high-fiber
cooking spray

Steps:

  • Slice lime into wedges, juice half the wedges. Set aside lime juice. Set aside rest of wedges for garnish.
  • Combine all sauce ingredients in a mixing bowl and set aside or refrigerate until ready to prepare the rest of the dish.

  • -Cut pepper in half and remove seeds and white part. Place on broiler pan skin side up. Broil until skin just starts to char, about 5-7 minutes. Slice when cool. You could use a torch to char it if you like, or substitute jarred roasted red pepper slices.
  • In a medium bowl, whisk the sauce ingredients until thoroughly combined (milk through black pepper) and set aside.
  • Boil the pasta al dente according to box directions.

Steps:

1 to 1.5 lbs. chicken pieces
2.5 cups sweet potato, chopped into chunks
3 tbsp. dry flaked unsweetened coconut
3/4 cup good-tasting chicken stock
1 can (14 ounces) coconut milk
2 shallots or 1/4 cup purple onion, finely chopped
1 thumb-size piece galangal OR ginger, grated or minced
4 cloves garlic, minced
1-2 fresh red chilies, minced•3 Tbsp. fish sauce
1 tbsp. tomato ketchup OR cooked tomato puree
3/4 tsp. ground turmeric
1 tbsp. ground coriander
1/2 tbsp. ground cumin
1/2 tsp. whole cumin seeds
1 bay leaf
1-2 kaffir lime leaves
1/2 to 1 tsp. sugar, to taste
2-3 Tbsp. vegetable oil
1/4 cup fresh coriander

Steps:

  • 1.Heat a wok or large frying pan over medium-high heat. Add the flaked coconut, 'dry frying' it by stirring until fragrant and lightly toasted to a light golden-brown. Transfer to a bowl to cool. 2.Return pan to heat. Add 2 Tbsp. oil plus shallots/onion, ginger, garlic and chili. Stir-fry 1-2 minutes. 3.While stir-frying, add the following: turmeric, coriander, and 2 types cumin. Stir spices in, adding a little more oil if needed. 4.Add stock plus 3/4 can of coconut milk. Add the bay leaf and kaffir lime leaves or lime juice. Also add the fish sauce, tomato ketchup/puree, and 1/2 tsp. sugar, stirring everything together well. 5.Add chicken and bring to a gentle boil, then reduce to a simmer (medium-low). Simmer 20 minutes for whole chicken pieces or 10 minutes for boneless chicken. Stir occasionally. 6.Add the sweet potato or yam plus 1/2 the toasted coconut. Continue simmering 10 more minutes, or until potato/yam has softened enough to easily pierce with a fork and chicken is cooked. Stir occasionally. 7.Reduce heat to minimum. Add remaining coconut milk and stir to dissolve into the curry sauce. Taste-test for salt and spice, adding more fish sauce if not salty or flavorful enough, or more chili for a spicier curry. Add more sugar if you prefer it sweeter. Portion out into bowls and top with fresh coriander plus a final sprinkling of toasted coconut.
