**1. Classic Thai Beef Burger:**
This recipe forms the cornerstone of the Thai burger experience. Ground beef is infused with a symphony of Thai flavors, including lemongrass, galangal, kaffir lime leaves, and a touch of heat from chili peppers, creating a succulent and flavorful patty. The burger is then grilled to perfection and served on a toasted bun, accompanied by a refreshing cucumber-onion salad and a zesty Thai sauce.
**2. Thai Tofu Burger:**
For a plant-based alternative that doesn't compromise on taste, the Thai tofu burger is an excellent choice. Firm tofu is marinated in a blend of coconut milk, Thai red curry paste, and aromatic spices, resulting in a tender and flavorful patty. Pan-fried to a golden crisp, the tofu burger is nestled in a soft bun, complemented by a medley of fresh vegetables and a tangy tamarind sauce.
**3. Spicy Thai Chicken Burger:**
This recipe adds a fiery twist to the classic burger concept. Ground chicken is combined with a blend of Thai herbs and spices, including chili peppers, coriander, and cumin, creating a patty that packs a punch. Grilled to perfection, the chicken burger is served on a toasted bun, topped with a spicy Thai chili sauce, crunchy pickled vegetables, and a cooling cucumber-mint relish.
**4. Thai Shrimp Burger:**
Seafood lovers will delight in the Thai shrimp burger, a combination of succulent shrimp and aromatic Thai flavors. Fresh shrimp are minced and mixed with a blend of herbs, spices, and panko breadcrumbs, forming a flavorful patty that is pan-fried until golden brown. Served on a toasted bun, the shrimp burger is finished with a sweet and tangy Thai chili sauce and a refreshing cucumber-onion salad.

THAI CHICKEN SLAW BURGERS
One of my family's favorite meals! We vary the toppings by sometimes using cabbage slaw and other times broccoli slaw. Super healthy and low in fat! We've also substituted iceberg lettuce leaves for the buns to lower the calories. Messier but so yummy! Serve any extra slaw on the side. You can serve these over rice or on a bed of salad, too. We've also turned them into lettuce wraps to save more calories!

COCONUT BASIL CHICKEN BURGERS WITH THAI PEANUT PESTO
Steps:
- Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium-high.
- For the slaw: Whisk together the lime juice and sugar in a medium-sized bowl to dissolve the sugar. Add the pear and carrot and toss to coat. Cover and chill until serving time.
- For the pesto: Place all of the ingredients except the tomatoes in a small food processor; process briefly until the mixture forms a coarse paste. Transfer to a small bowl and gently stir in the tomatoes. Cover and set aside.
- For the patties: Combine the coconut milk, lime zest, and lime juice in a 10-inch fire-proof skillet. Place the skillet on the grill rack and bring the mixture to a simmer. Continue cooking, stirring occasionally, until the mixture is thickened and reduced to 2/3 cup, about 15 minutes. Add the curry paste to the mixture and whisk until smooth. Transfer to a small bowl to cool.
- Place the chicken in a large mixing bowl. Add the cooled coconut milk mixture, basil, panko and salt. Using a large fork, mix the ingredients together gently but thoroughly. Divide the mixture into 6 equal portions and form the portions into patties to fit the buns, making a slight indentation in the center of each patty.
- When the grill is ready, brush the grill rack with oil. Place the patties on the rack, cover, and cook for 4 minutes. Flip the patties, cover, and cook an additional 4 minutes, or until the juices run clear from the center of the patties when pierced. During the last few minutes of cooking, arrange the buns, cut side down, around the edges of the grill to toast lightly.
- To assemble the burgers: Distribute an equal amount of the slaw on the bottom buns. Top each with a patty and a dollop of the pesto. Add the bun tops and serve.

THAI BURGERS
This is my adaption of a Thai Burger recipe by Rachel Ray. The original recipe calls for 2 pounds of ground chicken breast. I used turkey breast and only about 1/3 pound per person. The burgers were shaped about 30 minutes ahead of cooking, allowing the flavors to blend somewhat. The burgers are delicious and moist. The dipping sauce really sets these apart.

Steps:
- In a large bowl, mix all burger ingredients together except for the olive oil, adjusting the salt and pepper to taste; with hands lightly mix the mixture and shape into 4 equal patties about 1 inch thick, pressing in the middle to prevent it from bulging while cooking.
- Place the burgers in the refrigerator and allow to stand for 30 to 45 minutes to allow the flavors to blend.
- Separate the lettuce leaves from the core and wash under running water, place on paper towels to drain; wash the bell pepper, core, seed and slice into thin strips.
- In a large non-stick skillet, heat the olive oil, thoroughly coating the pan; add the shaped burgers and cook over medium-high heat until brown on the outside and cooked through, turning once, approximately 6 minutes per side.
- While the burgers are cooking, place all the dipping sauce ingredients in blender jar and blend until smooth and creamy; pour prepared sauce into individual serving dishes and set aside.
- To plate, place a couple of drained lettuce leaves on a plate, top with cooked burger, a few slices of cucumber and several slices red bell pepper. Sprinkle chopped basil on each serving. Place a dish of the dipping sauce on plate and serve.
- The prep time allows for the 30 to 45 minute refrigeration time.

THAI INSPIRED TURKEY BURGERS (LOW FAT)
This is my latest concoction in my mission to bring healthier food to my household. Over the past few weeks I have been using Fridays to try out different versions of healthier burgers. Tonight we had these Thai inspired turkey burgers. They had a fresh taste and I think it is important to use the fresh versions of the ingredients rather than dried spices to get that taste. I had mine on a bun with some crisp lettuce and some fat free mayo and ketchup. I bet they would be really nice with some sweet chili sauce in place of the ketchup and mayo though. These could easily be made up and frozen raw to have ready when short of time. Cooking time includes chilling time.

Steps:
- Put the lemongrass, garlic, ginger, green onions, cilantro, chili flakes and lime zest into a food processor or chopper along with the water and blitz them until they are finely chopped and combined.
- Add the mixture to the turkey and also put in the egg white.
- Mix the turkey and the other ingredients together by hand until they are well combined.
- Put into the fridge to chill for about 30 minutes for them to firm up a bit.
- Take out of the fridge and shape into four equal sized burger patties.
- Then either fry them off in a pan as you would normally do or do as I do and brush them very lightly with a bit of extra virgin olive oil and cook them on a Foreman type grill. It takes about 8 minutes or so for them to be fully cooked.
- Serve.
